Zucchini Carrot & Sweet Potato Vegan Burger / Patty / Tikki
Burgers don't always have to be about meat, and this recipe proves that Zucchini , Carrot ,Sweet Potato and a few spices can make a delicious and vegan / vegetarian burger.
The fresh, juicy zucchini and mouthwatering spices makes a truly refreshing, filling and fit-friendly burger. Zucchini adds just the right amount of flavor and moisture to these burgers.These burgers are moist, flavorful, seasonal, and delicious.

Ingredients:-
Zucchini:- 2 small ( 1 Cup grated )
Carrot:- 1 small ( 3 1/4 Cup grated)
Sweet Potato:- 1 small ( 1 Cup boiled & grated)
Salt
Carom seeds/ Ajwain:- 1 Tsp
Garam Masala:- 2 Tsp
Red Chilli powder:- 1 Tsp
Baking Powder:- 1/2 Tsp
Corn starch :- 3 Tsp
All Purpose Flour:- 1/4 Cup
Bread Crumbs:- 1/4 Cup
Oil For Frying
Procedure:-
1) Grate the Zucchini , boiled potato & Carrot.
2) Place zucchini in a colander and add 1 tsp Salt to it. Toss to combine and set aside for at least 30 minutes.
3)Squeeze the water out of zucchini. You can use your hands or use a cheesecloth.
4)Mix everything in a bowl. You can at this point do a taste test to see if you want more salt. Season accordingly.
5)Mix until well combined.
6)Make small (lime sized) balls.
7)Form into patties. Repeat for rest of them. At this point you can also refrigerate these in the fridge (for about 20-30 min) which will help to hold them up well while frying. It also helps to avoid oil retention. Its not strictly necessary to do this.
8) Add 1-2 tbsp of oil to your Cast iron pan (or as desired to coat the bottom of a non stick skillet. Note that regular non stick will require less amount of oil) . When hot, add the patties.
9)Cook them until golden-reddish brown on both the sides. Takes around 5-6 minutes each side.
Serve hot with ketchup / Chilli sauce/ vegan Yogurt or vegan sour cream.

Soya Mix Vegetable Korma / Vegan Recipe
Straight from the kitchens of Northern India, a tasty vegetable dish, fit for a royal feast! It's amazing how the addition of a little cashew cream gives a rich feel to a dish! Ensure that the mixture is cooked well after adding the tomato purée... only then will the sour taste of tomatoes mellow and you will get a balanced flavor.
Soya Mix Vegetable Korma
Preparation Time:- 15 Minutes

Makes 4 servings
Ingredients:-
Soya oil:- 2 Tbsp
Ginger-garlic (adrak-lehsun) paste:- 1 Tsp
Finely chopped green chillies:- 1 Tsp
Finely chopped onions:- 1/4 Cup
Fresh tomato puree:- 1/4 Cup
Salt to taste
Turmeric powder (haldi):- 1/2 Tsp
Chilli powder:- 1 Tsp
Coriander-cumin seeds (dhania-jeera) powder:- 1 Tsp
Sugar:- 1/2 Tsp
Soaked and roughly chopped soya nuggets :- 1/2 Cup
Chopped mixed boiled vegetables (carrots, French beans,corn, cauliflower etc.):-1/2 Cup
Non Dairy Milk:- 1/4 Cup
Cashew cream:- 3 Tbsp
Finely chopped coriander (dhania) for the garnish:- 2 Tbsp
Procedure:-
1) Heat the soya oil in a kadhai, add the ginger-garlic paste, green chillies and onions and sauté till the onions turn light brown in colour.
2) Add the tomato purée, salt, turmeric powder, chilli powder, coriander-cumin seeds powder and sugar and sauté for 8 to 10 minutes or till the soya oil separates from the gravy.
3) Add the soya chunks, mixed vegetables, non dairy milk and cashew cream and simmer for another 5 minutes.
Serve hot garnished with coriander.

Easy ( 5 Minute ) Sweet Potato Stir Fry / Shakarkandi Ki Sabzi / Vegan Side Dish
This quick and easy Indian Style Sweet Potato Stir fry is perfect for any weeknight supper . It is low in carb and full of flavor.Can be served over rice, filling for a tortilla, or eaten by itself.
Easy Sweet Potato Stir Fry / Shakarkandi Ki Sabzi / Vegan Side Dish
Preparation Time:- 5 Minute
Cooking Time:- 5 Minute
Serves:- 2
Ingredients-
Sweet potato – 1
Oil – 1 Tbsp
Mustard seeds / Rai – 1/2 Tsp
Cumin Seeds/ Jeera:- 1/2 Tsp
Turmeric powder/ Haldi – 1/2 Tsp
Red Chili powder – 1/2 Tsp
Garam Masala Powder – 1 Tsp
Salt – to taste
Procedure :-
1) Peel the potatoes and chop them into small pieces (about ¼ inch cubes).
2) Heat oil in a non stick or a cast iron pan over a medium heat. When hot, add the mustard & cumin seeds, as soon as they start to crackle add turmeric powder, chili powder, garam masala, salt and fry for a minute.
3)Add the chopped sweet potatoes and mix everything well. Cover it with a lid and let the potatoes cook until soft but not mushy.
(Keep stirring the potatoes in between to ensure even browning, don’t overcook it as it will become very mushy. Switch off the gas when they still have a slight bite to them. This will take about 4-5 mins.)
Serve with any Indian bread / naan / roti / chapati....Enjoy:)

Chole Paneer / Chickpeas & Indian Cottage Cheese Curry:- Channa/chole is also known as White chick peas or garbanzo beans. Chole Paneer is a famous Punjabi dish.You can make this with or without gravy . This dish can be best served with hot pooris, raita and onion( for salad).
TO MAKE IT VEGAN:- Replace Paneer with Firm or extra firm tofu
Sindhi Channa Recipe:-his is a really different recipe of Channa..The best thing is that you can make it in one pot and it is so easy but yet delicious..Can be served as a snack or side dish. TO MAKE IT VEGAN:- Replace Paneer with Firm or extra firm tofu
Chick Pea Starter ( A Healthy Snack):-hese chick peas are so addictive & is a great crunchy alternative to high-fat snacks, will satisfy anytime cravings. Make sure the chick peas are very dry before you put them in the pan to toast otherwise they will become mushy.Use the leftover toasted chick peas on salads or Pasta.

Indian Bottle Gourd Bread / Lauki Ka Paratha / Vegan
If your kids refuses to eat bottle gourd/ lauki ( like mine), then serve these parathas for their next breakfast and i promise they will never know what they ate in those delicious paratha..
Indian Bottle Gourd Bread / Lauki Ka Paratha / Vegan
Preparation Time:- 10 minutes
Cooking Time:- 15-20 minutes
Serves:- 4-6
Ingredients:-
Whole Wheat Flour:- 1 1/2 Cups
Gram Flour / Chickpea Flour / Besan:- 1/2 Cup
Salt
Bottle gourd/ Lauki:- 1/2 lb , grated
Carom seeds/ Ajwain:- 1/2 Tsp
Cilantro leaves:- 2 Tbsp, chopped
Red Chilli powder:- 1/2 Tsp
Turmeric Powder / Haldi:- 1/4 Tsp
Oil for cooking
Procedure:-
1) Sieve the whole wheat flour and gram flour with salt.
2) Add grated bottle gourd, carom seeds, cilantro leaves, red chilli powder, and turmeric powder.
3) Knead to make a dough, add water if needed. Keep aside covered for 5 minutes.
4) Divide the dough into balls. Dust and roll each ball slightly with a rolling pin, apply 1/4 tsp oil and fold into a triangle.(or any shape you like)
5) Dust and roll again to a 4" triangle.
6) Shallow-dry each paratha on a heated griddle/tawa with 1 tbasp of oil until light golden brown.
Serve hot with pickle ...Enjoy:)
Notes:- If you have any leftover dough then just wrap it in plastic food wrap and refrigerate for upto 2 days

Potato:- 1 medium, cut into strips
Green Bell Pepper:- 1 medium,cut into strips
Yellow Bell Pepper:- 1 medium,cut into strips
Red Bell Pepper:- 1 medium,cut into strips
Salt and sugar as per taste
Red chilli powder:- 1 Tsp
Turmeric Powder:- 1 Tsp
Garam Masala Powder:- 1 Tsp
Soya Sauce:- 1 Tbsp
Procedure:-
1)Heat oil on a medium heat in a non stick pan, when hot add cumin mustard and sesame seeds.
2)When seeds start to crackle add bell peppers & potato.
3)Cook it uncovered until half done (about 5 minutes)
4)Add salt,sugar,red chilli powder, turmeric powder,garam masala & soya sauce, mix it well.
6)Cook it again uncovered until done ( for about 5-8 minutes)
Serve it hot as a side dish with roti/indian bread and curry

Notes:-
1) Try to cut all the veggies same size so that they can cook evenly.
2) Make sure not to cover the pan while cooking to preserve the original colors of the veggies.
3) You can make this stir fry without potato too , or just with one colored bell pepper ( Use green bell pepper if making with single color ). I used all the colors and cut it into thin strips so that it looks more appealing to my little ones and they loved it..
