This is the best way to use leftover rice. Fried rice are great for lunchbox or for quick meals. Serve it with chilled raita.
Oil:- 2 Tbsp
Cumin seeds:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Slivered Almonds:- 1 Tbsp
Dried Cranberries:- 1 Tbsp
Thinly sliced vegetables(carrot, capsicum, onion, cabbage):- 1/2 cup each
Rice:- 2 1/2 cups (cooked rice)
Salt as per taste
Garam Masala Powder:- 1 Tsp
Red Chilli Powder:- 1 Tsp
Soya sauce:- 1 1/2 Tbsp
Spring Onions:- 1 (finely chopped)
Coriander leaves:- 2 Tsp (finely chopped)
1)In a non stick pan , heat the oil on a medium heat.
2)When hot add cumin seeds,mustard seeds , slivered almonds & dried cranberries, saute for a minute.
3)Add all the veggies , salt, garam masala, red chilli powder and soya sauce, mix everything well & cook till veggies are little tender ( you don't have to cook for long as veggies are suppose to have little crunch in this recipe)
4) Add rice and mix well.
5) Garnish it with spring onion and coriander leaves before serving..
