The oil has to be smoking hot. Add the tortillas one at at a time, gently press to let them puff. Flip them over and cook on the other side till you get a golden brown color. You can see the tortilla puffing up!

1) Leftover tortillas can be frozen.

3) Most of the supermarkets here in USA sell these uncooked flour and corn tortillas. They can be found near deli section on your supermarket in the refrigerated section.

<b>Procedure:- </b>Finely chop all the ingredients and mix them well in a bowl. It will last upto 2 days in refrigerator ( do not add any dressing if you want to refrigerate ) . I didn't mention any measurement of the ingredients as you can use as per your taste/requirement. you can also mix n match any vegetables/fruits of your choice.

<b>Procedure:-
</b><br/>
<br/>
1) Mix all the ingredients ( except onion & ginger) in a blender until well blended.. ( It should be like a pancake batter, use water as needed to make the batter right consistency) .
<br/>
<br/>
2) Take out the batter in a bowl and add onion and ginger, mix well.
<br/>
<br/>
3) Heat a non-stick pan on medium heat & grease it lightly with oil .
<br/>
<br/>
4) Spread 1/4 cup batter on the non-stick pan to make a chilla/crepe.
<br/>
<br/>
5)Cook one side over a slow flame until the base is golden brown in color. Turn over to cook the other side.
<br/>
<br/>
6)Remove the chilla/crepe and repeat with the remaining batter.
<br/>
<br/>
Serve hot with any nutritious chutney, pickle ,ketchup or enjoy as it is.

<b>Procedure:-
</b><br/><br/>
1) Grate the Zucchini , boiled potato & Carrot.
<br/><br/>
2) Place zucchini in a colander and add 1 tsp Salt to it. Toss to combine and set aside for at least 30 minutes.
<br/><br/>
3)Squeeze the water out of zucchini. You can use your hands or use a cheesecloth.
<br/><br/>
4)Mix everything in a bowl. You can at this point do a taste test to see if you want more salt. Season accordingly.
<br/><br/>
5)Mix until well combined.
<br/><br/>
6)Make small (lime sized) balls.
<br/><br/>
7)Form into patties. Repeat for rest of them. At this point you can also refrigerate these in the fridge (for about 20-30 min) which will help to hold them up well while frying. It also helps to avoid oil retention. Its not strictly necessary to do this.
<br/><br/>
8) Add 1-2 tbsp of oil to your Cast iron pan (or as desired to coat the bottom of a non stick skillet. Note that regular non stick will require less amount of oil) . When hot, add the patties.
<br/><br/>
9)Cook them until golden-reddish brown on both the sides. Takes around 5-6 minutes each side.
<br/><br/>
Serve hot with ketchup / Chilli sauce/ vegan Yogurt or vegan sour cream.

1) Mix the sweet potato, onion, bell pepper, and garlic to a large bowl.

<b>Ingredients:-

Sooji/ Semolina:- 1/2 Cup<br/>
Sifted Maida / All purpose flour :- 1/2 Cup <br/>
Pitted Dates / Khajoor :- 18<br/>
Water:- 3/4 Cup <br/>
Oil:- 1/4 Cup<br/>
Baking powder:- 2 1/2 Tsp <br/>
Chopped walnuts:- 1/2 Cup (Optional)<br/><br/>
<b>Procedure:-
</b><br/><br/>
1) Soak dates in water for 3 - 4 hours, till they are soft
<br/><br/>
2) Sift flour and baking powder together - 2 to 3 times, so that the baking powder mixes well. Add sooji and mix thoroughly.
<br/><br/>
3) Grind dates with the water(no additional water needed)
<br/><br/>
4) Mix oil in the dates paste, blend well.
<br/><br/>
5) Start mixing the dry ingredients into the above wet mix, 1/3rd at a time.
<br/><br/>
6) Once mixed well, add chopped walnut if using.
<br/><br/>
7) Grease cupcake/muffin pan with oil, dust with maida/all purpose flour.
<br/><br/>
8) Spoon the batter into the pan.
<br/><br/>
9) Bake at 350 deg F in a preheated oven, for 22 - 25 minutes. check for doneness with a toothpick

10) Once done, cool on a cooling rack.

Curry powder:- 4 Tsp <br/>
Garam masala:- 4 Tsp <br/>
Fresh ginger root, peeled and minced :- 1 inch piece <br/>

Diced tomatoes (14.5 oz):- 1 can <br/>
Garbanzo beans, rinsed and drained (15 oz):- 1 can<br/>
Frozen peas:- 1 1/4 Cup <br/>
Coconut milk (14 oz):- 1 can <br/>
Dried currants or raisins:- 1/2 Cup <br/>
Chopped cashews, optional:- 1/2 Cup <br/>

<b>Procedure:-
</b><br/>
<br/>
1) Put the potatoes in a pot of salted water and bring to a boil.
<br/>
<br/>
2) Reduce heat to keep at a simmer and cook until just tender–about 15 minutes. Drain them and let them steam dry for a bit.
<br/>
<br/>
3) While the potatoes are cooking, heat the oil in a large skillet over medium heat.
<br/>
<br/>
4) Add the onion and garlic and cook for about 5 minutes, or until translucent.
<br/>
<br/>
5) Add the cumin, cayenne pepper, curry powder, garam masala, ginger, and salt. Cook for 2 minutes more.
<br/>

6) Add the tomatoes, garbanzo beans, peas, and potatoes.
<br/>

7) Add the coconut milk, dried fruit, and cashews (if using) and bring to a simmer for 5-10 minutes.

Mix Vegetable - 2-3 Cups ( I used frozen ones)<br/>
Cooked Chick peas- 1/2 Cup<br/>
Potato - 1 Cut into small cubes<br/>
Tomato - 2 ( Make a smooth paste in a blender )<br/>
Coconut milk- 2 Cups<br/>
Tomato paste - 1 Tbsp<br/>
Ginger - 1 Inch chopped finely<br/>
Garlic pods - 2 Chopped finely <br/>
Turmeric powder- 1/2 Tsp<br/>
Coriander powder- 1/2 Tsp<br/>
Cumin powder- 1/2 Tsp<br/>
Garam masala to taste<br/>
Red chilly powder to taste<br/>
Bay leaves- 1<br/>
Cloves - 3<br/>
Cardamom -3<br/>
Cinnamon stick - 1 small piece<br/>
Salt to taste<br/>
Lemon juice to taste<br/>
Oil - 4 Tbsp<br/>

<b>To Grind:-
</b><br/><br/>
Medium onion- 1<br/>
Handful of mint leaves<br/>
A big handful of coriander leaves
<br/><br/>
<b>Procedure:
</b><br/><br/>
1) Add a tbsp of oil in a pan and fry the chopped onion till light brown. Turn off the heat. Let cool for few minutes.
<br/><br/>
2) Take the sauteed onion, coriander leaves and mint leaves in a mixer. Add some water and make a fine paste. Set a side.
<br/><br/>
3) Add a tbsp of oil and add the bay leaves, cardamom, cloves, cinnamon and ginger. Fry for few seconds.
<br/><br/>
4) Now add the pureed tomato and some salt. Cook till the oil oozes out from the sides of the pan.
<br/><br/>
5) Add in the coriander powder, cumin powder, garam masala and red chilly powder. Fry for few seconds.
<br/><br/>
6) Add the ground onion mixture and saute for few minutes.
<br/><br/>
7) Stir in the coconut milk, tomato paste and necessary water for the gravy.
<br/><br/>
8) Cook the gravy for ten minutes and check the seasoning.
<br/><br/>
9) Now add all the veggies and boiled chick peas. Reduce to low and cook for ten to fifteen minutes.
<br/><br/>
10) Turn off the heat and add in the lemon juice.
<br/><br/>
Serve the rich mixed vegetable coconut curry with some Flat bread (Naan) or pulav.

Ginger-garlic (adrak-lehsun) paste:- 1 Tsp<br/>
Finely chopped green chillies:- 1 Tsp<br/>
Finely chopped onions:- 1/4 Cup <br/>
Fresh tomato puree:- 1/4 Cup <br/>
Salt to taste<br/>
Turmeric powder (haldi):- 1/2 Tsp<br/>
Chilli powder:- 1 Tsp <br/>
Coriander-cumin seeds (dhania-jeera) powder:- 1 Tsp <br/>
Sugar:- 1/2 Tsp <br/>
Soaked and roughly chopped soya nuggets :- 1/2 Cup <br/>
Chopped mixed boiled vegetables (carrots, French beans,corn, cauliflower etc.):-1/2 Cup <br/>
Non Dairy Milk:- 1/4 Cup <br/>
Cashew cream:- 3 Tbsp <br/>
Finely chopped coriander (dhania) for the garnish:- 2 Tbsp<br/>

<b>Procedure:-
</b><br/><br/>
1) Heat the soya oil in a kadhai, add the ginger-garlic paste, green chillies and onions and sauté till the onions turn light brown in colour.
<br/><br/>
2) Add the tomato purée, salt, turmeric powder, chilli powder, coriander-cumin seeds powder and sugar and sauté for 8 to 10 minutes or till the soya oil separates from the gravy.
<br/><br/>
3) Add the soya chunks, mixed vegetables, non dairy milk and cashew cream and simmer for another 5 minutes.
<br/><br/>
Serve hot garnished with coriander.

<b>3 Ingredient Vegan Energy Balls
</b><br/>
<br/>
<b>Preparation Time:-</b> 2 Minutes<br/>
<b>Cooking Time:-</b> 0

<b>Ingredients:

<br/>
Almonds Or any of your favorite nuts:- 1 Cup<br/>
Dates, pitted and chopped:- 1 cup <br/>
Raisins Or Cranberries:- 1 Cup <br/>
<br/>
<b>Procedure:-
</b><br/>
<br/>
1) Pulse nuts until they are in rough pieces (don’t let it go until powder or butter).Remove and set aside.
<br/>
<br/>
2) Place dates in food processor and blend until it forms a ball.
<br/>
<br/>
3) Repeat the process with raisins too. Now mix everything together and pulse until just barely combined.
<br/>
<br/>
(If too sticky, you can add more nuts or oats; if too dry, more dates)
<br/>
<br/>
Or Alternatively
<br/>
<br/>
Combine all ingredients in a food processor or high tech blender. Mix well until the mixture forms a giant, evenly mixed balls. You may have to stop mixing and scrape down the blender once or twice.

4) Form mixture into evenly sized balls.

Refrigerate!

Allergic to nuts? Substitute sunflower seeds or pumpkin seeds for the almonds. You can double or triple the recipe too.

If the balls are too soft right out of the processor, toss in the refrigerator until they firm up.

1) If your recipe makes enough dough for more than one pizza, divide your dough into individual pizza amounts before you package it for the freezer.
<br/><br/>
2) Store your pizza dough in the freezer until you need it. It'll keep indefinitely, but is <b>best used within three months</b>.
<br/><br/>
3)Turn this kid-friendly favorite into a <b>complete meal by serving it with a side salad</b>. Add a selection of veggies such as cucumber, diced tomato and chopped carrots. Top with a creamy dressing.
<br/><br/>
4)The<b> pizza dough should be frozen after it has risen once </b>and been knocked back. Divide the dough into your preferred portion sizes, wrap loosely in clingfilm and seal each ball of dough tightly in a freezer bag. Thaw the dough overnight in the fridge, or for 2-3 hours at room temperature, then roll out, spread on toppings and bake.
<br/><br/>
5)It’s <b>best to transfer frozen dough from the freezer to the refrigerator</b> the night before (or 10 to 12 hours before) you want to use it. But the dough balls pulled straight from the freezer and left to warm up on the counter will be completely defrosted in about 1-1/2 hours. The dough is practically indestructible.
<br/><br/>
6)<b>If you want to bake the pizzas next day</b> then do not freeze ,just line a floured baking sheet , put the dough balls on it, and cover them with plastic wrap, giving them room to expand (they’ll almost double in size), and let them rise in the refrigerator overnight. To use dough that has been refrigerated overnight, simply pull it out of the refrigerator about 15 minutes before shaping the dough into a pizza.
<br/><br/>
7)<b>Use a pizza stone</b> and preheat it in a crazy hot oven for 30 minutes before baking. This gives you a great crispy crust and chewy, doughy center.

It’s always fun to plan out a festive breakfast for the holidays.Snowman Pancakes are perfect for wintery days or Christmas breakfast. Both kids and adults will love these yummy pancakes. Invite your little ones to help decorate their snowmen and they'll jump out of bed in a hurry!

<b>Ingredients:-
</b><br /><br />
Your favorite Pancake batter ( Check at the end to see list of my favorite pancake recipes)<br /><br />
Decorations ( I used strawberries, chocolate chips, pecans, maple syrup , powdered sugar, see more options in Notes below)
<br /><br />
<b>Procedure:-
</b><br /><br />
1) HEAT skillet over medium-high heat or griddle to 375ºF. Spray with no-stick cooking spray.
<br /><br />
2) Using about 1/4 cup of batter for a snowman, pour 2 pancakes, one slightly smaller than the other, onto the hot pan or griddle with sides touching to resemble a snowman.
<br /><br />
3)Cook 1 to 1 1/2 minutes on each side or until golden brown.
<br /><br />
Remove from griddle & decorate as desired.
<br /><br />
<b>Notes / Tips:-
</b><br /><br />
1)You can also use medium sized spring release cooking scoop to create the perfect size pancakes for making Snowmen.
<br /><br />
2)<b>Other things you can use for decoration:-</b>Pretzel sticks, chocolate chips, dried cranberries and/or halved banana slices, apple hat, blueberries or raisin eyes or buttons, jam for scarf, carrot nose, coconut whipped cream,Chocolate syrup,Marshmallow
<br /><br />
3)Keep pancakes warm in a preheated 200F degree oven until all pancakes are cooked. Serve immediately. Pancakes taste best right after they are made. Pancakes freeze well, up to 2 months.( See below)

4)For even more fun, let the kids decorate the pancakes themselves!
<br /><br />
5)<b>Alternative Way to make ghost pancakes:-</b> Pre-fill a squirt bottle with pancake batter. Squirt outline on hot griddle first, then fill in with more batter.Cook one side and then flip.

1) Add the sugar, flour, cocoa, and salt to the mug and mix.

2) Then add the oil and Non Dairy Milk and mix the dry and wet ingredients together. Be sure to be thorough, there's a tendency for clumps of the dry ingredients to form.

3)Stir in the chopped chocolate or nuts, if you’re using them.

4)Microwave on high for a minute, checking it after 30 seconds (microwaves vary) – it will be done when it’s springy on top but still a bit gooey in the center when done.

1) As soon as you arrive home with fresh cilantro, remove the cilantro from the produce bag.

1) Gently rinse the bunch in cool water and let air dry.. I even pat them with a towel sometimes. Get them dry as possible.

Preheat your oven to 400 degrees.

Chop the vegetables into bite-sized pieces.

Toss the vegetables with olive oil, salt & garam masala or any other seasoning mix you are using.

Spread the vegetables out over a large sheet pan ( cover the sheet pan with aluminium foil for easy cleanup) and roast for 30-40 minutes, stirring once half way through.

Take it out and squeeze some lemon juice on the top and mix everything well.

Warm your tortilla on a plate in the microwave for about 10-20 seconds.The tortilla should be warm and pliable.

Add Guacamole in the center of each open flour tortilla.

Fold/Roll the burrito.

Coat an 8-inch nonstick skillet with cooking spray; heat over medium to medium-high heat.Transfer the burrito to the hot skillet (seam side down ) and cook until light brown, carefully flip the burrito and cook the another side. ( this step can be skipped if you have cooked tortilla, mine was not cooked).

Wrap in foil if desired. Repeat with the rest of the tortillas.

<b>Perfect Vegan Pancakes ( No egg, No Dairy, No Refined Sugar)
</b><br/><br/>
<b>Preparation Time:</b> 5 Minutes<br/>
<b>Cooking Time:- </b>10-15 Minutes<br/>
<b>Serve:-</b> Makes 8 four to five-inch pancakes
<br/><br/>

<b>Ingredients:-
</b><br/><br/>
All Purpose Flour:- 1 1/4 Cups<br/>
Baking Powder:- 2 Tsp<br/>
Salt:- 1/2 Tsp<br/>
Ground Cinnamon:- 1 Tsp ( OPTIONAL)<br/>
Oil:- 2 Tbsp<br/>
Water: 1/3 Cup<br/>
Plain Rice Milk Or Soy Milk:- 1 to 1 1/4 Cups<br/>
Pure Maple Syrup:- 2 Tbsp<br/>
Pure Vanilla Extract:- 1 Tsp
<br/><br/>
<b>Procedure:
</b><br/><br/>
1) Preheat a large skillet over medium heat for atleast 2 Minutes ( and upto 5 minutes).
<br/><br/>
2) In a large bowl , sift together the flour , baking powder, salt and cinnamon.
<br/><br/>
3) Make a well in the center and add the oil, water, milk, maple syrup and vanilla.
<br/><br/>
4) Mix just until ingredients are combined. A few lumps in the batter are just fine.
<br/><br/>
5) Spray the pan with a light coat of cooking spray ( or a very light coat of oil). Pour pancakes one at a time and cook until bubbles form and the top looks somewhat dry ( about 3 minutes).
<br/><br/>
6) Flip over and cook for another minute.
<br/><br/>
Serve....Enjoy:)
