Soya Mix Vegetable Korma / Vegan Recipe
Straight from the kitchens of Northern India, a tasty vegetable dish, fit for a royal feast! It's amazing how the addition of a little cashew cream gives a rich feel to a dish! Ensure that the mixture is cooked well after adding the tomato purée... only then will the sour taste of tomatoes mellow and you will get a balanced flavor.
Soya Mix Vegetable Korma
Preparation Time:- 15 Minutes

Makes 4 servings
Ingredients:-
Soya oil:- 2 Tbsp
Ginger-garlic (adrak-lehsun) paste:- 1 Tsp
Finely chopped green chillies:- 1 Tsp
Finely chopped onions:- 1/4 Cup
Fresh tomato puree:- 1/4 Cup
Salt to taste
Turmeric powder (haldi):- 1/2 Tsp
Chilli powder:- 1 Tsp
Coriander-cumin seeds (dhania-jeera) powder:- 1 Tsp
Sugar:- 1/2 Tsp
Soaked and roughly chopped soya nuggets :- 1/2 Cup
Chopped mixed boiled vegetables (carrots, French beans,corn, cauliflower etc.):-1/2 Cup
Non Dairy Milk:- 1/4 Cup
Cashew cream:- 3 Tbsp
Finely chopped coriander (dhania) for the garnish:- 2 Tbsp
Procedure:-
1) Heat the soya oil in a kadhai, add the ginger-garlic paste, green chillies and onions and sauté till the onions turn light brown in colour.
2) Add the tomato purée, salt, turmeric powder, chilli powder, coriander-cumin seeds powder and sugar and sauté for 8 to 10 minutes or till the soya oil separates from the gravy.
3) Add the soya chunks, mixed vegetables, non dairy milk and cashew cream and simmer for another 5 minutes.
Serve hot garnished with coriander.

Beans & Lentils Stir Fry / Phalliyan Aur Channa Dal Ki Sabzi / Indian Side Dish
Beans are a good source of dietary fiber, vitamins, and minerals and combining it with lentils /channa dal make this super nutritious stir fry/sabzi. Serve it hot as a side dish with any meal.
Ingredients:-
Beans,washed & chopped into small pieces:- 2 Cups
Channa Dal, soaked in water for 1 hour :- 1/4 Cup
Oil:- 2-3 Tbsp
Cumin seeds/ jeera:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Onion, chopped:- 1 medium
Salt
Red Chilli powder:- 1/2 Tsp
Turmeric powder:- 1/2 Tsp
Garam Masala Powder:- 1/2 Tsp
Procedure:-
1) Heat oil in a non stick pan on a medium heat. When hot add cumin & mustard seeds, when they start to crackle ,add onion, fry until light brown in color.
2)Add salt, red chilli powder, turmeric powder & garam masala powder, mix everything well.
3)Add channa dal & beans ,mix well. Cook it covered until beans are completely cooked.( stir in between & use some water if required)
Serve it with roti , paratha, indian bread etc ...
TIP:-
To fasten the process you can par boil both beans and channa dal before adding to the tadka.(step 3)

Shahi Methi Rajma / Red Kidney Beans Stir fry With Nuts , Fenugreek & Yougurt Sauce
Shahi methi rajma tastes best with fresh methi or fenugreek leaves but can also be prepared with kasoori or dried methi( I used kasoori methi in this recipe).The cooked beans blend perfectly with the methi flavor and makes for a lovely side dish with chapatis or rice.

Ingredients:-
Rajma / Red kidney beans:- 1 Cup
Fenugreek / Methi Leaves:- 1 Cup (If you don't find fresh methi you can use Kasuri Methi / Dried Fenugreek)
Curd/ Yogurt/ Dahi:- 1 Cup
Medium Size Onion:- 1
Garlic / Lehsun:- 3 Cloves (Minced)
Cashew nuts / Kaju:- 1/4 Cup (Roughly Chopped)
Raisins/ Kishmish :- 1/4 Cup
Cumin seeds / Jeera:- 1 Tbsp
Bayleaves / Tejpatta:- 2
Turmeric powder / Haldi:- 1 Tsp
Asafoetida / Hing :- 1 Tsp
Chilli powder/ Lal Mirch :- 1 Tsp (Add more if you want it spicy)
Garam masala :- 1 Tbsp
Oil:- 1 Tbsp
Salt to taste
Procedure:-
1)Soak kidney beans overnight.
2)Wash methi properly then chop finely.
3)Pressure cook kidney beans/ rajma and methi (whichever you are using dried or fresh) together.
4)In a pan pour oil and when it is hot add cumin seeds, bay leaves, haldi/turmeric, hing/asfoetida, chilli powder, garlic ( chopped finely), chopped onion.
5)Saute till onion is golden brown.
6)Add cooked mix of kidney beans and methi.
7)Add garam masala, cashenuts, raisins and salt according to taste. Cook for 2-3 minutes.
8)Add one cup of beaten dahi. Mix everything well. Switch off the gas and cover the pan, let it sit for 4-5 minutes before serving.
Serve with rice/ chapati.
