Sukhi Arbi Ki Sabzi / Colocassia Stir Fry In Indian Spices / Vegan



Arbi is also called Eddo, taro and Colocasia. Sukhi Arbi ki Sabji is a dry Indian vegetable dish relished with Chapati/Roti/Naan This recipe is very easy to cook and could be accompanied by any main dish.It is usually eaten during or after fasting on holidays.



Sukhi Arbi Ki Sabzi / Colocassia Stir Fry In Indian Spices

Preparation Time: 10-15 minutes
Cooking Time: 15-20 minutes
Servings: 4

Ingredients:-

Colocassia (arbi):-500 grams
Green chillies :- 2 (optional)
Oil:- 4 Tbsp
Carom seeds / Ajwain:- 1/2 Tsp
Turmeric powder/ Haldi:- 1/2 Tsp
Coriander powder / Dhaniya powder:- 2 Tsp
Red chilli powder/ Lal Mirch:- 1 Tsp
Dry mango powder / Aamchur:- 1 Tsp
Salt to taste
Lemon Juice Of 1 Lemon

Fresh coriander leaves :- 1/2 of small bunch (optional)

Procedure:-

1) Wash the colocassia thoroughly.

2) Pressure cook in a vessel over water for 2 whistles. Make sure the colocasia is cooked but not overcooked.

3) Remove and peel the colocasia. Cut into small cubes. Keep aside.

4) Heat oil, add Carom seeds/ajwain, chopped green chillies and arbi.

5) Add turmeric powder, coriander powder, red chilli powder, amchur powder and mix well.

6) Reduce heat, cover and cook for five minutes.

7) Add salt, juice of lemon and mix.

Add chopped coriander leaves (if using). Remove from heat and keep it covered for a while before serving.

Chickpeas Cashew & Potato Vegan Stir Fry / Chole Kaju Aur Aloo Ki Sabzi

Preparation Time:- 10 minutes

Serves:- 2-4

Ingredients:-

Oil:- 2 Tbsp
Cumin Seeds:- 1 Tsp
Mustard Seeds:- 1 Tsp
Unsalted Cashews/ Kaju:- 2 Tbsp, roughly chopped
Potato/ Aloo:- 1 big, Boiled ,peeled and cut into small pieces
Chickpeas/Chole/Channa:- 2 Cups , boiled & drained OR Canned
Salt
Red Chilli Powder:- 1/2 Tsp
Turmeric Powder:- 1/2 Tsp
Channa Masala Powder:- 1 Tsp
Kasoori Methi Powder/ Fenugreek powder:- 1 Tsp
Flaxseed powder:- 1 Tbsp
Tamarind Pulp:- 1 1/2 Tsp
Sugar:- 1 Tsp



Procedure:-

1) Heat oil in a non stick pan on a medium heat.

2) When hot add mustard ,cumin & cashew. Stir fry for 1 minute.

3) Add salt, red chilli powder ,turmeric powder & potato, mix everything well.

4) Add boiled chickpeas/chole in the above spice mixture, mix well. Cook for 3-4 minutes.

5) Add kasoori methi/Fenugreek powder, Channa Masala powder ,flaxseed powder ,tamarind pulp & sugar. Mix and cook for another 2 minutes.

6) Switch off the gas, cover the pan and let it sit for 4-5 minutes before serving..

Serve hot as a side dish with any Indian bread/roti/tortilla or enjoy as it is..

Beans & Lentils Stir Fry / Phalliyan Aur Channa Dal Ki Sabzi / Indian Side Dish



Beans are a good source of dietary fiber, vitamins, and minerals and combining it with lentils /channa dal make this super nutritious stir fry/sabzi. Serve it hot as a side dish with any meal.



Ingredients:-

Beans,washed & chopped into small pieces:- 2 Cups
Channa Dal, soaked in water for 1 hour :- 1/4 Cup
Oil:- 2-3 Tbsp
Cumin seeds/ jeera:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Onion, chopped:- 1 medium
Salt
Red Chilli powder:- 1/2 Tsp
Turmeric powder:- 1/2 Tsp
Garam Masala Powder:- 1/2 Tsp


Procedure:-

1) Heat oil in a non stick pan on a medium heat. When hot add cumin & mustard seeds, when they start to crackle ,add onion, fry until light brown in color.

2)Add salt, red chilli powder, turmeric powder & garam masala powder, mix everything well.

3)Add channa dal & beans ,mix well. Cook it covered until beans are completely cooked.( stir in between & use some water if required)

Serve it with roti , paratha, indian bread etc ...

TIP:-

To fasten the process you can par boil both beans and channa dal before adding to the tadka.(step 3)

Masala Corn Salad / Spiced Corn Salad / Healthy Side Dish Recipe



You can serve this dish as a salad or as a side dish to any meal. Spiced toasted corn tossed with bell pepper and tomato not only makes a flavorful salad but looks absolutely beautiful sitting in your plate. If you are using fresh corn then i would recommend to grill it directly on the gas or grill then remove the corn, add spices and veggies and serve immediately.



Makes 1 Serving

Ingredients:-

Oil:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Corn (Fresh or frozen, thawed ):- 1/2 Cup
Green Bell Pepper:- 2 Tbsp (chopped finely )
Tomato:- 2 Tbsp (chopped finely )
Salt
Black Pepper :- A Pinch
Chaat Masala :- A Pinch


Procedure:-

1) Heat the oil in a medium wok / non stick pan , when hot add the mustard seeds, covering the pan with a lid as it tends to splatter.

2)Add the corn and stir fry until they are nicely toasted.

3)Switch off the gas and transfer the corn in a bowl.

4) Add bell pepper, tomato , salt , black pepper and chaat masala, mix everything well.

Serve warm at room temperature.

Potato:- 2 (Peeled and cut lengthwise , in long thin strips)

Jeera/Cumin seeds:- 1 Tsp
Rai/ Mustard Seeds:- 1 Tsp
Saunf/ Fennel Seeds:- 1 Tsp
Til/ Sesame Seeds:- 1 Tsp
Salt
Turmeric powder:- 1/2 Tsp
Red Chilli Powder:- 1/2 Tsp
Garam Masala Powder:- 1 Tsp
Kasoori methi Powder:- 1 Tsp
Peanuts:- 2 Tbsp ( Crushed )


Procedure:-

1) Heat the oil in a non stick pan.

2)When hot, add cumin , mustard, fennel & sesame seeds.

3)As soon as the seeds start to crackle add salt, turmeric, red chilli powder & garam masala. Mix it well.

4)Add Carrots and potatoes and mix everything well. Let it cook on the low to medium heat uncovered until carrot and potatoes are thoroughly cooked . Switch off the gas.

5)Add kasoori methi powder and crushed peanuts to the carrot potato stir fry and cover it and let it sit for 5 minutes.

Serve hot with roti/paratha/indian bread etc.

Gobhi Gajar Aur Matar Ki Sabzi/ Cauliflower Carrot & Peas Stir Fry



This quick, easy and nutritious Cauliflower Carrot & Peas Stir Fry is great comfort food and perfectly goes with simple paratha and roti (Indian bread)



Ingredients:-

Oil:- 4tbsp
Cumin seeds/Jeera:- 1 tsp
Mustard seeds:- 1tsp
Ginger(chopped finely):- 1tbsp
Garlic(chopped finely):- 1tbsp
Green chillies(chopped finely):- 2
Onion(Chopped):- 1
Tomato- 2(medium,chopped)
Salt as per taste
Turmeric powder:- 1/2 tsp
Garam Masala:- 1tsp
Red Chilli powder:- 1/2 tsp
Cauliflower:- 1/2 Cup
Peas(thawed):- 1/3 Cup
Carrot:- 1/2 Cup
Cilantro for garnish


Procedure:-

1)Heat oil in a pan on medium heat, add Cumin & mustard seeds, let it splutter.
3) Add ginger & garlic and saute for 1 minute.
4) Add onion and fry until light brown.
5) Add tomato, salt, red chilli powder, turmeric, garam masala and mix everything well.
6) Cook till tomatoes are tender (about 3-4 minutes).
7) Add cauliflower ,carrot and peas and mix everything well, let it cook uncovered till cooked properly ( it should be soft but not mushy)..

Garnish it with coriander and serve hot with roti/Indian bread.
