Chickpea & Mango Vegan Salad / Side Dish



Savory chickpeas and sweet, tangy mango combine in this unexpectedly delicious salad.It’s an almost raw salad (except for the chickpeas),it’s super easy to throw together, versatile and perfectly balanced.Lightly sweet and very fresh.

Mango, lime and cilantro are such a classic and delicious combination, don’t you think?



Chickpea & Mango Vegan Salad

Preparation Time:- 10 Minutes
Cooking Time:- 15-20 Minutes
Makes- 2-4 Serving

Ingredients:-

Chickpeas:- 1 1/2 Cups , boiled or canned
Olive Oil:- 1 Tsp
Cumin Powder:- 1 Tsp
Coriander Powder:- 1 Tsp
Cinnamon:- A pinch
Onion:- 1/3 Cup, chopped
Cilantro:- 1/3 Cup, chopped
Bell Pepper:- 1/3 Cup, chopped
Mango:- 1 small, peeled and cut into small cubes
Strawberry:- 4-5 , sliced lengthwise
Pecans:- Handful, roughly chopped
Raisins:- 1/4 Cup
Salt & Pepper
Lemon Juice Of half lemon

Procedure:-

1) Heat oil in a non stick pan. When hot add chickpeas, cumin powder, coriander powder and cinnamon, mix everything well. Cook on medium heat for 3-4 minutes. Let it cool. ( you can bake chickpeas too see notes)

2) Transfer the chickpeas in a big salad bowl and add all the rest of the ingredients. Mix well.Taste. Adjust seasoning.

Let it marinate for half an hour before serving.Keep in refrigerator until you are ready to eat.

Notes:-

1) To Bake the chickpeas you can follow this recipe.

2) Chickpea mixture can be made ahead and refrigerated in airtight container up to overnight.

3)To make it a complete meal: Serve this salad on top of rice or quinoa, and make sure to include the side of avocado.

4) To make this a truly raw salad, use sprouted garbanzo beans! When the weather warms up, sprout the beans for 3 – 4 days and simply use the same recipe.

Stuffed Okras With Peanuts & Sesame / Bharwa Bhindi



In this recipe Okra/Bhindi is stuffed with peanuts, sesame & spice mixture. This makes a lovely and tasty dinnertime presentation and are perfect to serve as a side dish with any curry or rice with lentils. Choose unblemished firm, small to medium size okra for this dish.Leftover spice mixture can be added directly into the okra while cooking.



Ingredients:-

Okra/Bhindi:- 1 pound
Ground cayenne pepper:- 1/2 to 1/3 Tsp
Ground cumin:- 1/2 Tsp
Ground coriander:- 1/2 Tsp
Grated fresh ginger:- 1 Tbsp
Salt
Ground peanuts:- 1 Tbsp
Sesame seeds:- 1/2 Tsp
Oil:- 2-3 Tbsp




Procedure:-

1)Wash and dry the okra completely using paper towels.

2) Cut the tops and the bottoms, slit along the length of each okra for the stuffing.

3)Combine the cayenne,cumin,coriander,ginger,salt,peanuts and sesame seeds in a small bowl to make the stuffing.

4) Use a small spoon to fill each okra with 1/2 Tsp of the stuffing.

5) Heat the oil in a large non stick pan over medium heat. When oil is hot, carefully place the okra in the pan.

6) Cook for 5 minutes. Reduce the heat to low, and stir so that all sides of the okra are crisper, about 5-10 minutes.

Serve hot with any curry or rice with lentils or roti/parathas.

Masala Corn Salad / Spiced Corn Salad / Healthy Side Dish Recipe



You can serve this dish as a salad or as a side dish to any meal. Spiced toasted corn tossed with bell pepper and tomato not only makes a flavorful salad but looks absolutely beautiful sitting in your plate. If you are using fresh corn then i would recommend to grill it directly on the gas or grill then remove the corn, add spices and veggies and serve immediately.



Makes 1 Serving

Ingredients:-

Oil:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Corn (Fresh or frozen, thawed ):- 1/2 Cup
Green Bell Pepper:- 2 Tbsp (chopped finely )
Tomato:- 2 Tbsp (chopped finely )
Salt
Black Pepper :- A Pinch
Chaat Masala :- A Pinch


Procedure:-

1) Heat the oil in a medium wok / non stick pan , when hot add the mustard seeds, covering the pan with a lid as it tends to splatter.

2)Add the corn and stir fry until they are nicely toasted.

3)Switch off the gas and transfer the corn in a bowl.

4) Add bell pepper, tomato , salt , black pepper and chaat masala, mix everything well.

Serve warm at room temperature.

Gobhi Kurma / Cauliflower In Tomato Sauce



This simple and delicious kurma will definitely please all the cauliflower lovers. Serve it hot as a side dish with indian bread .



Ingredients:-

Oil:- 2-3 Tbsp
Gobhi/Cauliflower:- 1/2 ( cut into small pieces , roughly 3 Cups)
Cumin seeds/ Jeera:- 1 Tsp
Mustard seeds/ Rai:- 1 Tsp


Grind into fine paste:-
-----------------------

Onion:- 1 (chopped)
Tomato:- 1 (chopped)
Ginger:- 1 Tsp
Garlic:- 1 Tsp ( 2 cloves)


Spices
-------

Salt
Red Chilli powder:- 1/2 Tsp
Turmeric Powder:- 1/2 Tsp
Garam Masla Powder:- 1 Tsp
Coriander powder:- 1 Tsp




Procedure:-

1)Heat oil in a non stick pan on a medium heat.

2) When hot add cumin and mustard seeds, when seeds start spluttering add cauliflower , mix well, fry for 3-4 minutes.

3) Add the ground paste to the cauliflower along with all the spices (Salt,Red Chilli powder,Turmeric Powder,Garam Masla Powder,Coriander powder), mix everything well.

4)Cook the cauliflower uncovered on medium heat until soft but not mushy.

Serve hot with roti/paratha/indian bread.
