Stuffed Okras With Peanuts & Sesame / Bharwa Bhindi



In this recipe Okra/Bhindi is stuffed with peanuts, sesame & spice mixture. This makes a lovely and tasty dinnertime presentation and are perfect to serve as a side dish with any curry or rice with lentils. Choose unblemished firm, small to medium size okra for this dish.Leftover spice mixture can be added directly into the okra while cooking.



Ingredients:-

Okra/Bhindi:- 1 pound
Ground cayenne pepper:- 1/2 to 1/3 Tsp
Ground cumin:- 1/2 Tsp
Ground coriander:- 1/2 Tsp
Grated fresh ginger:- 1 Tbsp
Salt
Ground peanuts:- 1 Tbsp
Sesame seeds:- 1/2 Tsp
Oil:- 2-3 Tbsp




Procedure:-

1)Wash and dry the okra completely using paper towels.

2) Cut the tops and the bottoms, slit along the length of each okra for the stuffing.

3)Combine the cayenne,cumin,coriander,ginger,salt,peanuts and sesame seeds in a small bowl to make the stuffing.

4) Use a small spoon to fill each okra with 1/2 Tsp of the stuffing.

5) Heat the oil in a large non stick pan over medium heat. When oil is hot, carefully place the okra in the pan.

6) Cook for 5 minutes. Reduce the heat to low, and stir so that all sides of the okra are crisper, about 5-10 minutes.

Serve hot with any curry or rice with lentils or roti/parathas.

Besan Wali Aloo Beans / Potato & Beans Stir Fry With Chickpeas Flour



Aloo beans is a simple stir fry/sabzi made with chopped beans and potatoes, cooked in spices and flavored with chickpea flour.

Ingredients:-

Oil:- 3-4 tbsp
Potato:- 1 big or 2 small (Cut into small pieces)
Beans:- 2 cup (chopped)
Cumin seeds:- 1 Tsp
Mustard seeds:- 1 Tsp
Garlic:- 1 Tbsp(finely chopped)
Ginger:- 1 Tbsp (finely chopped)
Onion:- 1 (medium size, chopped)
Turmeric powder:- 1 tsp
Salt as per taste
Red Chilli powder:-1 tsp
Garam Masala:- 1 tsp
Besan/Gram Flour/Chickpea Flour:- 1/8 Cup


Procedure:-

1) Heat oil in a kadai/non stick frying pan on a medium heat.

2) Add cumin and mustard seeds, when it starts to crackle add garlic and ginger, saute for a minute.

3) Add onion and fry until they are translucent ( it will take about 2-3 minutes)

4) Add all the spices (salt,turmeric,red chilli powder & garam masala powder) & beans, mix everything well.

5) Let it cook covered for about 3-4 minutes (keep stirring in between to avoid sticking on bottom).

6) Add potatoes & besan/gram flour, cook uncovered until beans and potatoes are well cooked ..do the taste test to check:)

Serve hot with roti/chapati/paratha..Enjoy:)

Semolina Pancakes



Semolina pancakes are very easy, quick and colorful. . . Great to serve for breakfast or snacks with a chutney of your choice.

Soaking Time: 30 minutes.
Preparation Time: 10 mins
Cooking Time: 15 mins
Makes 14 mini pancakes


Ingredients

Semolina (rava/sooji):- 1 1/2 Cups
Curds (dahi):- 3/4 Cup
Finely chopped cabbage:- 1/2 Cup
Grated carrot:-1/2 Cup
Finely chopped coriander (dhania):-1/4 Cup
Finely chopped green chillies:- 1 Tbsp
Salt to taste
Fruit salt/Eno:-2 Tsp
Oil:-5 Tsp


Procedure:-

1)Combine the semolina, curds and 1 cup of water in a bowl, mix well and allow it to soak for 30 minutes.

2) Add the cabbage, carrot, coriander, green chillies and salt and mix well.

3)Just before making the pancakes, add the fruit salt and 2 tbsp of water on the batter.

4) When the bubbles form, mix gently.

5)Add 2 tsp of oil and mix well.

6) Grease a non-stick pan with ½ tsp of oil, pour approximately 1½ tbsp of batter and spread it lightly.

7) Make 6 to 7 more pancakes at a time and cook using a little oil, till they turn crisp and golden brown from both the sides.

Repeat step 7 to make one more batch of pancakes.Serve immediately
