Beans & Soya Nuggets Stir Fry / Beans Nutri Ki Sabzi



This is a great quick and simple beans and nutri stir fry seasoned with Indian spices. Serve it hot as a side dish with roti and any curry



Ingredients:-

Beans, cut into small pieces:- 2 Cups
Nutri / Soya Nuggets:- 1 Cup (soak it in hot water for at least 15 minutes)
Oil:- 2-3 Tbsp
Cumin Seeds:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Onion:- 1 small, chopped
Salt
Red Chilli Powder:- 1 Tsp
Turmeric Powder:- 1 Tsp
Garam Masala Powder:- 1 Tsp
Curd/Yogurt/ Dahi:- 2 Tbsp
Flaxseed Powder:- 1 Tbsp
Water:- 1 Tbsp
Kasoori Methi/ Dried Fenugreek leaves Powder:- 1 Tsp




Procedure:-

1)Mix yogurt, flax seed & water in a bowl and keep it aside.

2)Heat oil in a non stick pan on a medium heat. When hot add cumin & mustard seeds, when they start to crackle add onion.

3)Cook till onions are light brown in color.

4)Add salt, red chilli powder, turmeric powder & garam masala powder, mix everything well.

5)Add beans & nutri/soya nuggets , mix well. Cook it covered till beans are halfway cooked.( stir in between & use some water if required)

6)Add yogurt & flax seed mixture to the beans and keep stiring it till everything is well mixed.Cook again for 2-3 minutes.

7) Add kasoori methi powder, mix again . Serve it hot with roti and any curry ...

Beans & Pakodi Ki Sabzi / Stir Fry / Indian Side Dish



Stir fried beans with onions and Indian spices alongwith crunchy pakodis make this recipe really interesting and flavorful.



This vegetarian stir-fry is a great way to use green beans when they're in season. This is be served as a side dish with any Indian bread ( Roti, Paratha, Poori etc).



Ingredients:-

Oil:- 2 Tbsp
Cumin seeds:- 1/2 Tsp
Garlic, minced:- 1 Tbsp
Ginger, minced:- 1 Tbsp
Onion:- 1/2 (chopped)
Beans(cut into small pieces):- 2 cups
Salt
Red chilli Powder:- 1/2 Tsp
Turmeric Powder:- 1/2 Tsp
Garam Masala Powder:- 1 Tsp
Pakodi:- 1 Cup


Procedure:-

1) Heat oil in a non stick pan on a medium heat. When hot add cumin seeds, when they start to crackle ,add garlic and ginger, saute for 30 seconds, add onion.

2)Cook till onions are light brown in color.

3)Add salt, red chilli powder, turmeric powder & garam masala powder, mix everything well.

4)Add beans and mix. Cook it covered until beans are completely cooked.( stir in between & use some water if required)

5)Add roasted pakodis to the beans , mix well .Cook again for 2 minutes.

Serve it with roti and any curry ...Enjoy:)

Khatti Meethi Phaliyan / Sweet & Sour Beans Stir Fry



Stir fried beans tossed with some tamarind, jaggery and a spicy coconut mixture. It's easy to make and full of Gujarati flavors. A little sweet, a little tangy!

Ingredients:-

For the spice paste:
----------------------

Chillies:- 4
Cumin seeds/Jeera:-1 Tbsp
Coriander seeds/Dhaniya:- 1/2 Tbsp
Coconut, shredded:- 4-5 Tbsp
Water, a little bit
Salt, to taste


To stir fry beans:
-----------------------

Oil:- 1 Tbsp
French beans, cut 3 cm long:- 2 cups


For the main preparation:
-------------------------

Oil:- 1/2 Tbsp
Mustard seeds:-1 Tsp
Til / white sesame seeds:- 1 Tsp
Haldi/Turmeric powder:- 1 Tsp
Asafoetida/Hing, a pinch
Coriander powder:- 2 Tsp
Curry leaves:- 10-15
Water, to cook the beans
Tamarind paste:-2 tsp
Jaggery / Gur:- 2 Tsp


Procedure:-

For the spice paste:
-----------------------

1)Dry roast bedki chillies, zeera, coriander seeds and coconut.
2)Pound them together in a mortar and pestle with some salt and water till it makes a fine paste.


To stir fry beans:
------------------

1)Add oil in a pan and stir fry beans on high heat for 2-3 minutes. Keep aside.


For the main preparation:
-------------------------

1)In a wok/ kadhai add oil, mustard seeds and til. Saute.
2)Add the spice paste, curry leaves, turmeric, hing and coriander powder. Saute. Add a little water to help the masala cook.
3)Add the stir fried beans with tamarind and jaggery. Add a little water to further cook the beans. Cook for 3-4 minutes.
4)Cover and let it cook in its residual heat.


Serve hot with indian bread/roti..Enjoy:)

Besan Wali Aloo Beans / Potato & Beans Stir Fry With Chickpeas Flour



Aloo beans is a simple stir fry/sabzi made with chopped beans and potatoes, cooked in spices and flavored with chickpea flour.

Ingredients:-

Oil:- 3-4 tbsp
Potato:- 1 big or 2 small (Cut into small pieces)
Beans:- 2 cup (chopped)
Cumin seeds:- 1 Tsp
Mustard seeds:- 1 Tsp
Garlic:- 1 Tbsp(finely chopped)
Ginger:- 1 Tbsp (finely chopped)
Onion:- 1 (medium size, chopped)
Turmeric powder:- 1 tsp
Salt as per taste
Red Chilli powder:-1 tsp
Garam Masala:- 1 tsp
Besan/Gram Flour/Chickpea Flour:- 1/8 Cup


Procedure:-

1) Heat oil in a kadai/non stick frying pan on a medium heat.

2) Add cumin and mustard seeds, when it starts to crackle add garlic and ginger, saute for a minute.

3) Add onion and fry until they are translucent ( it will take about 2-3 minutes)

4) Add all the spices (salt,turmeric,red chilli powder & garam masala powder) & beans, mix everything well.

5) Let it cook covered for about 3-4 minutes (keep stirring in between to avoid sticking on bottom).

6) Add potatoes & besan/gram flour, cook uncovered until beans and potatoes are well cooked ..do the taste test to check:)

Serve hot with roti/chapati/paratha..Enjoy:)
