Vegan French Toast / Eggless French Toast



French toast without EGGS , sounds crazy Right? This easy vegan French toast recipe uses bananas instead of eggs, giving it a sweet flavor & they are way better then french toast with eggs. Very moist and tasty. You will be pleasantly surprised at how yummy these are and will surely be glad to put French toast back onto your breakfast menu!:)



Vegan French Toast / Eggless French Toast

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes


Ingredients:-

Ripe bananas:- 2-3
Soy milk:- 3/4 Cup
Cinnamon:- 1 1/2 Tsp
Pumpkin pie spice (optional):- 1 Tsp
Vanilla:- 1 Tsp


Bread, any kind is fine
Vegan margarine




Procedure:-

1) Blend bananas, soy milk, cinnamon, pumpkin pie spice and vanilla in blender or food processor and pour mixture into pie plate or wide dish.

2) Gently dip bread slices into the mix, coating both sides.

3) Fry in vegan margarine in medium-hot skillet until golden brown.

Serve with maple syrup if desired, and, as always, enjoy your wonderful vegan French toast!



Notes:-

* If the toast is sticking to the pan ,add some margarine or pam or oil , turn down the heat and don't flip it very soon. Make sure to use thick slices of bread or day old bread to avoid any sogginess.

* Don't flip the toast too soon , cook the the toast for at least 4 minutes so the middle isn't soggy when you eat it.

* This recipe makes about 8-10 slices of bread, so if you have any leftover, add ice cubes and make a smoothie out of it.

Another Way To Avoid Sogginess:- First lightly toast the bread ( On stove top or in Oven). Then brush the batter onto one side of the bread rather than dipping the bread in the batter & brush the other side when ready to flip toast in the skillet.Make sure to use a good non stick skillet and keep your vegan butter handy while cooking. Cook on medium heat.

Black Bean & Rice Burger / Patty ( Rajma Ki Tikki ) / Vegan Burger Recipe



This VEGAN / VEGETARIAN Burger makes a terrific breakfast when topped with scrambled tofu, slices of avocado and couple shakes of hot sauce Or Stuff it inside pita bread with salsa and squeeze of lime.



Ingredients:-

Black Beans/ Rajma:- 1 Cup (canned , boiled)
Poha / Flattened Rice Flakes:- 1 Cup (Leftover rice can also be used instead)
Flaxseed Powder:- 1/8 Cup
All Purpose Flour:- 1/8 Cup
Breadcrumbs:- 1/8 Cup
Corn (fresh or canned):- 1/3 Cup, roughly chopped
Onion:- 1/3 Cup, finely chopped
Oil:- 1 Tbsp
Salt
Red Chilli Powder:- 1/2 Tsp
Turmeric Powder:- 1/2 Tsp
Garam Masala Powder:- 1/2 Tsp


Oil for shallow frying the patties.



Procedure:-

1) Take beans in a bowl and mash it coarsely with a potato masher or a fork.

2) If using Poha/Flattened Rice Flakes wash it with water and drain nicely OR If using lefover rice then coarsely pulse the rice in a food processor along with onion and corn.

3) In a big bowl mix all the ingredients together and let it stand for 10 minutes.

4) Shape into patties and keep it aside.

5) Heat the oil in a non stick pan over medium heat. When hot, add the patties and cook until browned on each side, 5-10 minutes total.

Serve it hot or at room temperature.

Leftover Cooked Rice Pancakes/Chillas



Everyone always have atleast some leftover rice in the fridge/kitchen, atleast i do :). These pancakes are the great way to use those leftovers. Use brown rice to make it more healthy & feel free to use any veggies in the batter.



Makes 6-8 small Panakes/chillas

Ingredients:-

Oil
Cooked Rice:- 1 1/2 Cups
Besan/Gram Flour:- 1/2 Cup
Whole Wheat Flour/aata:- 1/4 Cup
Flax Seed:- 1 Tbsp
Curd/yougurt:- 1/4 Cup
Salt
Turmeric/Haldi:- 1/2 Tsp
Red Chilli Powder:- 1/2 Tsp
Chaat Masala:- 1/2 Tsp
Water:- 1/2 Cup (Appprx , more or less as needed)
Onion:- 1/8 Cup
Grated Carrot:- 1/8 Cup
Cilantro:- 1/8 Cup
Eno Fruit Salt:- 1 Tsp


Procedure:-

1)In a blender , blend together cooked rice,besan,whole wheat flour,flax seed ,yogurt & water (as needed, it should look like a pancake batter or dosa batter).

2)Pour this mixture in a big bowl and add salt, turmeric,red chilli powder, chaat masala, onion, carrot and cilantro. Mix everything well.

3)Add eno fruit salt(just before you start making) and put about 1 tbsp of water over it , mix into the batter lightly , don't overmix.

4)Heat the oil in a good non-stick pan over low-medium heat, pour laddle full of batter (about 1/3 cup) in a pan and spread it lightly , let it cook on medium heat until the top part looks dry, peek through to see if its cooked and then turn the pancake carefully and cook the other side until nice and crisp.

Repeat the process to make all other pancakes..

Serve hot with any chutney/sauce/pickle..

Indian Style Vegetarian Crepes/ Chilla/ Puda



Indian Style Vegetarian Crepes/ Chilla/ Puda are great for eggless & protein packed breakfast. For variation you can add any vegetables you like (grated carrots,cabbage etc).

Makes 4-6 Small Crepes/Chilla

Ingredients:-

Gram Flour/ Besan:- 1/4 Cup
Whole Wheat Flour:- 1/8 Cup
Semolina/Sooji:- 1/8 Cup
Rice Flour:- 1/8 Cup
Onion(Finely Chopped):- 1/8 Cup
Coriander leaves/ Cilantro:- 2 Tbsp
Yogurt / Curd / Dahi:- 1/2 Cup
Salt as per taste
Brown Sugar:- 1 Tsp
Water as needed


Procedure:-

1)Place all the above ingredients except water in a large mixing bowl.

2)Add water(approx 1/2 Cup) and stir to make a smooth batter .

3)Use a spoon make sure there are no lumps. Batter should have same consistency as a pancake batter.

4)Take a heavy bottomed skillet , fry pan or Tawa and put it on medium heat, put some oil on the pan.

5)Once the pan is hot pour a laddle full of batter in the center of the pan and spread it like an omelet & cook on medium heat.Drizzle a little oil around.

6) Cook for about 2 to 3 minutes ,when the underside is a light golden, flip over, drizzle some more oil & cook pressing lightly till the other side is light golden too.Repeat the same process to make all chillas or crepes.

Serve with Red Chutney or Green Chutney

Aloo Methi Paratha (Indian Bread Stuffed With Potatoes & Fenugreek Leaves)



Love stuffed parathas as they are the best way to sneak in any vegetable you want in your kids meal.Parathas are popular for breakfast in North India. It is best served hot alongwith curd and pickle on the side.



    Ingredients:-

    For Stuffing:-

  • Boiled potatoes:- 2 (medium size)
  • Methi Leaves( roughly chopped):- 1/2 Cup
  • Coriander Leaves (chopped finely):- 2 Tbsp
  • Ginger(chopped finely):-1 Tbsp
  • Onion (small)chopped finely:- 1/2
  • Salt
  • Aamchoor/ Dry Mango powder:- 1 1/2 Tsp
  • Red Chilli powder:- 1/2 Tsp
  • Garam Masala:- 1 Tsp
  • Ajwain:- 1 Tsp


  • For Making Dough

  • 2 cups wheat flour (atta)
  • 1tbsp. oil
  • 1 tsp salt
  • warm water for mixing


Mix wheat flour, salt, oil and warm water. Knead well. Make dough stiff enough for roti/ paratha. Keep aside. Let it rest for 10 minutes.

To make the stuffing:-

1)Mash the potatoes in a separate bowl.
2)Mix rest of the stuffing ingredients in the potatoes well.

Serve hot alongwith curd /pickle/ curry on the side.

Vegetarian Mini Pizza Puffs



These mini veggie pizza puffs are just adorable.These are perfect for kids snacks or great as a party appetizer.You can add any ingredients you like or have on your hand like spinach, onions , olives, peppers, garlic , pineapple,etc..


Adapted from Everyday

Flour:- 3/4 Cup
Baking powder:- 3/4 Tsp
Whole milk:-3/4 Cup
Lightly beaten:- 1 egg
Mozzarella cheese, shredded :- 4 ounces (about 1 cup)
Bell Pepper(green or red):- 1/2cup (very finely chopped)
Onions:- 1/2 Cup (finely chopped) 1/2 cup pizza sauce
2 Tablespoons finely chopped fresh basil


Procedure:-

1)Preheat oven to 375o. Grease a 24-cup mini muffin pan.

2)In a large bowl, whisk together the flour and baking powder; whisk in the milk and egg. Stir in the mozzarella , bell peppers & onions ,let stand for 10 minutes.

3)Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

Microwave the pizza sauce until warmed through, then stir in 1 Tablespoon basil. Sprinkle the puffs with the remaining1 Tablespoon basil. Serve the puffs with the pizza sauce for dipping.

Zucchini Pancakes



Here is simple and healthy Zucchini pancake recipe to enjoy during breakfast or any time of the day.

Serves 2 (5-6 pancakes)

Ingredients:-
  • All purpose flour:- 1/2 cup
  • Sugar:- 3 Tbsp
  • Baking powder:- 1 Tsp
  • Baking soda:-1/4 Tsp
  • Salt:-1/4 Tsp
  • Egg:- 1
  • Greek yogurt:- 1/2 cup
  • Melted butter:- 2 Tbsp
  • Water or Milk (OPTIONAL):- 1/4 cup
  • Zucchini, grated:- 1 medium
Procedure:-

1) Preheat a nonstick skillet or griddle to medium-high heat (350 degrees). These pancakes are a little picky about temperature.

2)Whisk dry ingredients together (flour through salt) and set aside.

3)In a separate bowl, whisk egg, yogurt, and melted butter together. Combine dry and wet ingredients together and mix until just combined. Fold in grated zucchini. OPTIONAL: if the batter is too thick, add water or milk a little at a time, until the batter consistency reaches the desired thickness. For me, 1/4 cup was enough to thin the batter but keep them nice and fluffy, but you might not need it at all depending on how thick you like your pancakes.)

4)Scoop 1/3 cup of batter onto the griddle and gently spread the batter if necessary. When you see bubbles rising around the edges, flip the pancakes. I found that some of the pancakes took as long as 10 minutes to cook (5 minutes per side). Top with butter and maple syrup!

Leftover Channa Dal & Pudina Paratha



Here is very simple paratha recipe that can be made with lefover channa dal and addition of mint gives it a nice refreshing taste.Enjoy these parathas with curd/raita of your choice and pickle on side.

Ingredients:-

Channa Dal(cooked):- 3/4 Cup (Dal should be thick consistency not the watery)
Whole Wheat Flour:- 1 Cup
Salt as per taste
Ajwain seeds/Carom seeds:- 1/2 Tsp
Onion(finely chopped):- 1/4 cup
Ginger(finely chopped):- 1 Tbsp
Mint(chopped):- 2 Tbsp
Green Chillies (chopped):- 1 or 2


Oil for making parathas.

Procedure:-

1)Mix all the ingredients together in a bowl and make the dough without adding any water ( add water little bit only (about 1tbsp) if needed).
2) Let the dough rest for 10 minutes..
3) Now make a small ball out of the dough.
4) Roll it into a circle shape
5) Heat griddle on medium heat & cook the paratha from both sides by brushing it with oil..

Serve warm paratha with curd or any sabzi you like..
