Chickpea & Mango Vegan Salad / Side Dish



Savory chickpeas and sweet, tangy mango combine in this unexpectedly delicious salad.It’s an almost raw salad (except for the chickpeas),it’s super easy to throw together, versatile and perfectly balanced.Lightly sweet and very fresh.

Mango, lime and cilantro are such a classic and delicious combination, don’t you think?



Chickpea & Mango Vegan Salad

Preparation Time:- 10 Minutes
Cooking Time:- 15-20 Minutes
Makes- 2-4 Serving

Ingredients:-

Chickpeas:- 1 1/2 Cups , boiled or canned
Olive Oil:- 1 Tsp
Cumin Powder:- 1 Tsp
Coriander Powder:- 1 Tsp
Cinnamon:- A pinch
Onion:- 1/3 Cup, chopped
Cilantro:- 1/3 Cup, chopped
Bell Pepper:- 1/3 Cup, chopped
Mango:- 1 small, peeled and cut into small cubes
Strawberry:- 4-5 , sliced lengthwise
Pecans:- Handful, roughly chopped
Raisins:- 1/4 Cup
Salt & Pepper
Lemon Juice Of half lemon

Procedure:-

1) Heat oil in a non stick pan. When hot add chickpeas, cumin powder, coriander powder and cinnamon, mix everything well. Cook on medium heat for 3-4 minutes. Let it cool. ( you can bake chickpeas too see notes)

2) Transfer the chickpeas in a big salad bowl and add all the rest of the ingredients. Mix well.Taste. Adjust seasoning.

Let it marinate for half an hour before serving.Keep in refrigerator until you are ready to eat.

Notes:-

1) To Bake the chickpeas you can follow this recipe.

2) Chickpea mixture can be made ahead and refrigerated in airtight container up to overnight.

3)To make it a complete meal: Serve this salad on top of rice or quinoa, and make sure to include the side of avocado.

4) To make this a truly raw salad, use sprouted garbanzo beans! When the weather warms up, sprout the beans for 3 – 4 days and simply use the same recipe.

Crunchy Cucumber Salad With Crushed Peanuts / Kheere Aur Moongfali Ka Salad

Source:- 5 Spices, 50 Dishes (By Ruta Kahate)

Ingredients:-

English Cucumbers/ Kheera:- 2 ( Chopped into 1/4-inch dice, about 3 cups)
Green Serrano Chile/ Hari Mirchi:- 1 medium , minced ( seed first if you prefer)
Peanuts:- 1/2 Cup , preferably raw (but toasted, unsalted ones will do)
Lemon Juice:- 2 Tbsp ( or more if needed )
Salt:- 1 Tsp
Sugar:- 1/2 or 3/4 Tsp
Cayenne :- 1/8 Tsp
Canola Oil:- 1 Tbsp
Mustard Seeds:- 1/4 Tsp


Procedure:-

1) Place the diced cucumbers in a medium bowl along with the chile.

2) Using a coffee grinder or food processor , pulse the peanuts until they are reduced to a coarse powder. ( You don't want big chunks of peanuts, nor do you want a fine powder; stop grinding somewhere in between)

3) Add the peanuts to the cucumbers along with the lemon juice,salt and sugar and mix well.

4) Taste and adjust the salt , sugar, and lemon juice as needed. The salad should be slightly tart.

Make the tadka
---------------

5) Place the cayenne in a little pile on top of the salad. Do not stir in yet.

6) Heat the oil in a small skillet or butter warmer over high heat.

7) When it begins to smoke , add the mustard seeds, covering the pan with a lid or spatter screen.

8) As soon as the seeds stop sputtering, pour the oil over the cayenne.

9) Stir the dressing in and serve at room temperature or cold.

Cucumber Grape Salad With Black Olive & Mint Dressing / Healthy Salad Recipe



This healthy salad have a refreshing combination of ingredients , cucumber & mint which not only satisfy your taste buds but also gives you the nutrition you need.



Ingredients:-

Cucumber (Peeled) :- 1/2 of the medium size ( approx 1/2 cup cut into small cubes)
Grapes:- 10 ( cut in half )
Salt
A pinch of Sugar
Lemon juice:- 1 Tsp


Blend to make a puree :-
---------------------

Black Olives:- 1/4 Cup (Pitted)
Olive Oil:- 1/2 Tbsp
Black Pepper:- A Pich
Mint Leaves:- 6-7


Procedure:-

1) Mix cucumber, grapes , salt , sugar and lemon juice in a bowl.

2) In a blender make a puree/paste of black olives, olive oil, mint leaves & black pepper.

3) Add black olive and mint puree to the cucumber grape salad and mix everything well.

Serve immediately..
