Savory Vegan Semolina Cake ( Step By Step Pictures)


This is such an easy recipe to enjoy anytime and full of veggies and most importantly no soaking or grinding required.Use any vegetables you have at home, such as courgettes, cabbage, spinach and even fresh fenugreek leaves. It keeps well in the fridge for 4-5 days



Savory Vegan Semolina Cake

Preperation Time:- 10 Minutes
Cooking Time:- 40 Minutes
Serve:- 2
Recipe Adapted From :- Indian Food Made Easy by Anjum Anand

Ingredients:-

Semolina/Sooji:- 1 Cup
Water:- 1 Cup
Two handfuls frozen peas, defrosted
Onion - 2 Tbsp (Chopped)
Carrot:- 1 (Peeled & Grated), i used finely chopped
Handful fresh or frozen (defrosted) green beans, roughly chopped
Fresh ginger:- 1 inch piece , peeled and crushed
Red chilli powder:- 1 Tsp
Turmeric:- 1/2 Tsp
Salt, to taste (season well)
3 Tbsp oil, plus extra for greasing
Mustard seeds:- 1 Tsp
Cumin seeds:- 1/2 Tsp
Sesame seeds:- 1 Tsp
Bicarbonate of soda:- 1/2 Tsp

( The original recipe called for yogurt as one of the ingredient so if you have soy yogurt on hand you can replace 1/2 cup of water with 1/2 cup of soy yogurt)





Procedure:-

1. Preheat the oven to 200C/400F/Gas 6 and oil a loaf pan.

2. In a large bowl, mix together the semolina, water, vegetables, ginger, chilli powder, turmeric and salt to make a fairly thick batter. Taste and adjust with more salt or spices if necessary.

3. Heat the oil in a small pan. Add the mustard, cumin and sesame seeds and cook, stirring frequently, for 20 seconds, or until the mustard seeds have popped and the cumin and sesame seeds are aromatic. Stir the seeds and oil into the batter. If the batter is too thick, add a splash of water.

4. Stir in the bicarbonate of soda and immediately pour the mixture into the tin. Transfer to the oven and bake for 35-40 minutes, or until the top is golden-brown. It's ready when a skewer inserted into the cake comes out clean. Remove from the oven and allow to cool and become crisp in the pan.

5. Serve in wedges, either on its own or with chutney

Chickpea Flour Mini Puffs / Easy Vegan Gluten Free Snack Recipe / Besan Ke Pakode( Step By Step Pictures)



My daughter has started 1st grade this August, so now i have to officially give her a proper lunch box with 2 snacks and one lunch. I try to avoid packaged food as much as possible .So now I am always trying to find/make recipes that i can make fresh in the morning for her lunch box. These mini puffs are great for Kids lunch box as they are healthy and filling too.



Chickpea Flour Mini Puffs

Preparation Time:- 5 Minutes
Cooking Time:- 5 Minutes
Serves:- 1

Ingredients:

Chickpea/Gram flour Or Besan:- 1 Cup
Salt
Baking soda:- A Pinch
Red Chilli Powder:- 1/2 Tsp
Garam Masala Powder:- 1/2 Tsp
Dry Mango Powder:- 1/2 Tsp
Hot water:- 1/2 cup
Oil For Shallow Frying.



Procedure:-

1) In a bowl mix to combine the chickpea flour, salt, baking soda, redchilli powder, garam masala & dry mango powder.

2) Add water, and stir to combine

3) Let the mixture sit for 10 minutes.

4) Heat oil (add enough olive oil to coat the bottom of the pan) in a nonstick skillet over medium high heat.

5) With the help of ice cream scooper make small equal size puffs and put into a hot oil.

6) Coat back of your spoon with oil and lightly press the tops down.

7)Cook each side until they're golden brown.

8)Drain them on paper towels.

Serve hot along with any chutney..Enjoy

Notes:-

1) You can add any spices you like in the chickpea flour mixture as per your taste.

2) You can even add any herb like mint (chopped finely) in the batter to give the puffs different taste.

3) These are great snack for kids lunch box, pack it along with some tomato ketchup or chutney.

Quick Cheese Salsa Tortilla / Quesadilla ( Step By Step Pictures)



This easy vegetarian quesadilla recipe is stuffed with cheese & homemade salsa, they can be ready in a snap so great for snack or light meal.

Ingredients:-

Tortilla:- 1
Cheese as per your requirement
Oil / Oil Spray

Homemade Salsa :-
--------------

Onion, finely chopped:- 2 Tbsp
Tomato, finely chopped:- 2 Tbsp
Capsicum/ Bell Pepper, finely chopped:- 2 Tbsp
Cilantro:- 1 Tbsp
Salt
Black Pepper


Procedure:-

To Make Homemade Salsa, mix everything in a bowl and keep it aside .( Onion, Tomato, Capsicum, Cilantro,Salt & Pepper)

1) Heat the tortilla on a non stick pan from both sides

2) Transfer it to a plate.

3)Cover half of the tortilla with cheese.

4) Top it with homemade salsa.



5)Fold it in half by pressing it lightly.

6)Spray the top side with non stick spray and transfer it to the non stick pan.

7)Cook both sides until brown and crisp.

8) Serve hot.

Cinnamon Rolls (Step By Step Recipe)



These delicious homemade Cinnamon Rolls are delicious and full of cinnamon, sugar, and butter flavor.

Ingredients:-

For the dough:-
-----------------

All Purpose flour:- 3 cups
Warm water:- 1 cup
Yeast:- 1 Tbsp
Sugar:- 2 Tbsp
Oil:- 1/4 Cup
Salt:- 1/2 Tsp


For Topping:-
----------------

Melted Butter
Sugar
Cinnamon




Procedure:-

1) Warm the water in the microwave( for about 35 sec). Make sure it is not hot otherwise it will kill the yeast.

2) Mix yeast, honey, salt, oil and warm water together in a bowl. Leave it for 30 minutes. After 30 minutes you should see a froth appearing on this mixture. This indicates that yeast is active and it will do a great job on your dough.

3) In bowl put flour and mixture from step 2, make this into dough. You may have to adjust the water or flour as needed. When adjusting do it 1-2 tablespoons at a time.

4) After making dough cover dough with some oil so that it doesn't dry while we let it to rise or you can cover it with food wrap also.

5) For best rising, select temp as 350F and bake time one minute, turn the oven off after one minute even if it says preheat. The idea is to create a warm environment for the yeast to do its work. Cover the dough with food wrap and let dough rest inside this warm place for 1 hour. The dough will double in size.

6) After an hour lightly knead and roll out into rectangular shape.

7) Spread with softened butter. Sprinkle on cinnamon sugar. (make sure you use LOTS of cinnamon sugar, I never measured but be very generous.)

8) Roll into one long roll. To cut use a knife or piece of string or floss.

9) Place on well greased pans and let rise for 30 minutes.

Brush the top with melted butter & bake at 425 degrees for 10 minutes.

Spiced Chickpeas / Masaledar Chole / Quick Side Dish



This simple spiced chickpeas/garbanzo beans can be served as a side dish or add it in your salad or just enjoy as a snack anytime of the day.

Ingredients:-

Ghee/ Clarified Butter:- 2 Tbsp
Mustard seeds:- 1 Tsp
Cumin seeds:- 1 Tsp
Chole/Chickpeas/Garbanzo Beans:- 2 Cups (Boiled)
Salt
Red Chilli powder:- 1/2 Tsp
Garam Masala Powder:- 1 Tsp
Coriander Powder:- 1 Tsp
Cumin Powder:- 1/2 Tsp
Kasoori Methi powder:- 1 Tsp
Aamchoor powder:- 1/2 Tsp
Channa Masala Powder:- 1 Heaping Tsp

Procedure:-

1) Heat ghee in a non stick pan on a medium heat.

2) When hot add mustard & cumin seeds.

3) Add salt, red chilli powder, garam masala powder, coriander powder & cumin powder, mix everything well.

4) Add boiled chole/chickpeas in the above spice mixture, mix well. Cook for 2 minutes.

5) Add kasoori methi powder, aamchoor powder & Channa masala powder.

6) Switch off the gas, cover the pan and let it sit for 4-5 minutes before serving..
