Banana Bread In A Cup (Microwave Recipe)



I have been trying a lot of cup/mug recipes lately (35 Second Eggless Chocolate Cake,Two Minute Eggless Brownie Recipe,Cookie In A Cup).I love the fact that it is so quick and simple ,made with few ingredients and is single serving so you can enjoy it anytime of the day or night:)..

Ingredients:-

Non-stick cooking spray
All Purpose Flour:- 3 Tbsp
Sugar:- 1 Tbsp + 1 Tsp
Brown sugar:- 2 Tbsp
Salt:- 1/8 Tsp
Baking powder:-1/8 Tsp
Baking soda:-1/8 Tsp
Egg:- 1
Vanilla extract:- 1/4 Tsp
Vegetable oil:- 1 Tbsp
Milk:- 1 Tbsp
Ripe banana, mashed:- 1
Walnuts-2 tbsp (optional) Sprinkled on the top.


Procedure:-

1) Spray a microwave safe mug with cooking spray.

2) In a bowl, or right in the mug, whisk flour, sugar, salt, baking powder, and soda. Add egg and combine until just incorporated with dry ingredients.

3)Mix in vanilla, oil, milk and mashed banana.

4)Pop into the microwave for up to 3 minutes, with no fear to stop and check after 90 seconds for doneness.

5) The inside of this will be very hot when you first remove it from the microwave. Give it a few minutes.

Some variations you can do to the recipe ( i haven't tried these but these were mentioned in the comments by those who tried it)

1)Used quinoa flour,add nutmeg and use applesauce instead of oil.

2)Added a handful of chocolate chips to the batter, and spooned some homemade caramel sauce over the top when it came out of the microwave.

3)Banana acts like an egg in quick bread recipes so this recipe can be made without egg.

Bestest Zucchini Bread Recipe



I have so much zucchini piling up in my refrigerator from my vegetable garden so i decided to try some new bread recipe and while searching i found this great recipe and it is really really good. You can store the leftover bread in the refrigerator and toast it up with some butter on it for breakfast or snack..

Ingredients:-

Vegetable oil:- 1 cup
Enough chopped zucchini to blend to - 3 cups.
Salt:- 1 Tsp
Baking soda:- 1Tsp
Baking powder:- 1 Tsp
Vanilla:- 1 Tbsp
Cinnamon:- 1 Tbsp
Egg:- 1
Sugar:- 2 cups ( I used 1 cup white sugar and 1 cup brown sugar)
White flour:-3 1/2 Cups

Optional add-ins: mini-chocolate chips, chopped nuts, raisins, craisins, etc. etc.

Procedure:-

1)In a blender put vegetable oil and enough chopped zucchini to blend to 3 cups, Blend until you have awesome green mixture

2)Add salt, baking soda, baking powder & egg, blend again until smooth.

3)Add cinnamon & vanilla, blend again.The cinnamon adds a nice brown speckled color.

4)In a large bowl put white flour & sugar, Stir in blended mixture until well mixed, and then pour into greased pan.

5)Bake at 325 degrees for about an hour. Check with toothpick or sharp knife for doneness.

Let cool on a rack and Enjoy:)

Oatmeal Raisin Squares

This is a very simple yet delicious recipe. This comforting cake has a moist and dense texture with a slight hint of chocolate. Perfect with tea on a cold winter afternoon, or as a summer hiking snack. Enjoy the edge pieces with their slightly crisp sides. Yields about 25 2x2" squares.

  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 cup honey
  • ½ cup butter
  • 2 eggs
  • 1 ¾ cup flour
  • 1 teaspoon baking soda
  • 1 tablespoon cocoa
  • 2 cups raisins (or 8 oz chocolate chips)
  • ¾ cups coarsely chopped walnuts (optional)
  • 1 ¾ cup boiling water
Procedure:-
  1. Mix all ingredients together
  2. Smooth out into a shallow sheet pan
  3. Bake at 350 °F for between 40 and 60 minutes
  4. Slice into squares while warm, then refrigerate

Super Moist Banana Cake



Banana Cake Or Banana Bread, you can call this whatever you like. This cake is super moist and light with a great flavor of bananas in it..This recipe calls for sour cream , as i didn't have sour cream on hand i used plain full fat yogurt instead but still it tastes delicious.

Softened Butter:- 1/2 cup
Brown Sugar:- 1 cup
Eggs:- 2
Vanilla:- 1 tsp
All purpose Flour:- 2 cups
Baking Soda:- 1tsp
Baking Powder:- 1tsp

Ripe & Mashed Bananas:- 4
Sour Cream:- 1 cup
Dessicated Coconut:- 1/2 cup
Nuts:- 1/2 cup

Procedure:-

1) Cream butter & sugar in a large bowl.
2) Beat in eggs, vanilla, bananas & sour cream.
3) In a separate bowl , sift together flour, baking soda, baking powder & salt.
4) Mix the flour mixture in the wet mixture.
5) Add coconut and nuts.
6) Pour into a lightly greased square pan and bake at 350 degrees for 1 hour until done.

Serve at room temperature, Enjoy:)

Banana-Carrot Loaf (LOW FAT)

Whenever i go to supermarket i always buy bunch of bananas because i know if by any chance they go bad, i can use them to make so many things or i must say i want them to ripe soon so that i can try something new with those babies..This recipe is from Costco Cookbook which we got on Thanksgiving..Here is another entry for JFI-Carrots

Ingredients:-

Non fat cooking spray
3/4 cup Apple sauce
1 cup Sugar
2 eggs or 4 egg whites
1 3/4 cups All purpose Flour
1 tsp salt
3/4 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 cup grated carrots
1 cup mashed bananas

Procedure:-

1) Preheat oven to 350 F, coat 9- by- 5 inch loaf pan with cooking spray
2) In a bowl combine applesauce, sugar & eggs, beat until light & fluffy
3) In separate bowl, combine flour, salt, baking soda, baking powder & cinnamon. Add to the batter and blend well
4)Fold carrots & banana into the batter.
5) Pour batter into the prepared pan
6) Bake for 60-65 minutes or until toothpick inserted into the center comes out clean.

Makes 10 servings

TIP:- Dust lightly with confectioners sugar or spread with whipped low fat cream cheese and chopped nuts.

Store in a refrigerator uncovered..Enjoy:)
