Ultimate Lemon Pound Cake Recipe



When one of my friend gave me some juicy lemons from her garden, i had only two things in my mind , Pound cake and Lemonade.I decided to make pound cake first and it turned out great as you can see in the pictures.



This lemon pound cake has a perfect balance of everything flavor, texture & taste.Cooled cake can be wrapped tightly in plastic wrap and stored at room temperature for up to 5 days

Servings/Yield:- 8 servings/1 loaf

Ingredients:-

16 tablespoons unsalted butter (2 sticks), plus 1 tablespoon, softened, for greasing pan
1 ½ cups cake flour (6 ounces), plus 1 tablespoon for dusting pan
1 teaspoon baking powder
½ teaspoon table salt
1 ¼ cups granulated sugar (8 3/4 ounces)
2 tablespoons grated lemon zest plus 2 teaspoons lemon juice
4 large eggs
1 ½ teaspoons vanilla extract
Lemon Glaze (Optional)
½ cup granulated sugar (3 1/2 ounces)
¼ cup lemon juice, from 1 or 2 medium lemons


Procedure:-

1. Adjust oven rack to middle position and heat oven to 350 degrees. Grease 9 by 5-inch loaf pan with 1 tablespoon softened butter; dust with 1 tablespoon cake flour, tapping out excess. In medium bowl, whisk together flour, baking powder, and salt; set aside.

2. In glass measuring cup or microwave-safe bowl, microwave butter, covered with plastic wrap, at full power until melted, 1 to 2 minutes. (Alternatively, melt butter in small saucepan over medium heat.) Whisk melted butter thoroughly to reincorporate any separated milk solids.

3. In food processor, process sugar and zest until combined, about five 1-second pulses. Add lemon juice, eggs, and vanilla; process until combined, about 5 seconds. With machine running, add melted butter through feed tube in steady stream (this should take about 20 seconds). Transfer mixture to large bowl. Sift flour mixture over eggs in three steps, whisking gently after each addition until just combined.

4. Pour batter into prepared pan and bake 15 minutes. Reduce oven temperature to 325 degrees and continue to bake until deep golden brown and skewer inserted in center comes out clean, about 35 minutes, rotating pan halfway through baking time. Cool in pan for 10 minutes, then turn onto wire rack.

5. If using lemon glaze, while cake is cooling in pan, bring sugar and lemon juice to boil in small nonreactive saucepan, stirring occasionally to dissolve sugar. Reduce heat to low and simmer until thickened slightly, about 2 minutes.

6. After turning cake onto wire rack, poke the cake's top and sides with a toothpick and brush on Lemon Glaze (see illustrations below). Cool to room temperature, at least 1 hour. (Cooled cake can be wrapped tightly in plastic wrap and stored at room temperature for up to 5 days.)

Notes

You can use a blender instead of a food processor to mix the batter. To add the butter, remove the center cap of the lid so it can be drizzled into the whirling blender with minimal splattering. This batter looks almost like a thick pancake batter and is very fluid.

Super Moist Banana Cake



Banana Cake Or Banana Bread, you can call this whatever you like. This cake is super moist and light with a great flavor of bananas in it..This recipe calls for sour cream , as i didn't have sour cream on hand i used plain full fat yogurt instead but still it tastes delicious.

Ingredients:-

Softened Butter:- 1/2 cup
Brown Sugar:- 1 cup
Eggs:- 2
Vanilla:- 1 tsp
All purpose Flour:- 2 cups
Baking Soda:- 1tsp
Baking Powder:- 1tsp
Salt:- 3/4 tsp
Ripe & Mashed Bananas:- 4
Sour Cream:- 1 cup
Dessicated Coconut:- 1/2 cup
Nuts:- 1/2 cup

Procedure:-

1) Cream butter & sugar in a large bowl.
2) Beat in eggs, vanilla, bananas & sour cream.
3) In a separate bowl , sift together flour, baking soda, baking powder & salt.
4) Mix the flour mixture in the wet mixture.
5) Add coconut and nuts.
6) Pour into a lightly greased square pan and bake at 350 degrees for 1 hour until done.

Serve at room temperature, Enjoy:)

Easy Gingerbread Cake

I found this recipe here.( Originally adapted from Cooking Light cookbook)..This is very easy ginger bread cake with the hint of spices and has perfect level of sweetness for those who doesn't like too sweet cakes..

This cake is very light and moist ..we finished the whole cake same day :)..

Ingredients:-
  • 1/3 cup of sugar
  • 1/4 cup of butter, softened
  • 1/3 cup of molasses
  • 1 large egg
  • 1 1/2 cups of flour
  • 1 tsp ground ginger
  • 1/2 tsp baking soda
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/8 tsp of salt
  • 2/3 cup of 1% milk
  • 2 tsp powdered sugar (sifted)
Procedure:-

1)Preheat the oven to 350 degrees.
2)Beat sugar and butter at medium speed of a mixer until well blended and creamy.
3)Add the molasses and egg; beat well.
4)Combine flour and the next five ingredients, mixing well.
5)Slowly add the flour mixture to the sugar mixture alternately with milk, beginning and ending with the flour mixture.
6)Pour batter into an 8 inch square baking pan coated with cooking spray; Tap pan once on the counter to remove air bubbles.
7)Bake for 22-25 minutes or until a wooden pick inserted in the center comes out clean.
8)Cool in pan. Once the cake has completely cooled, sift powdered sugar on top.
