Thai Fried Rice Recipe
One of my dear friend made these yummy thai fried rice for potluck.
Please adjust the spice level as per your taste as these are on little spicy side , exactly the way i love :). These tastes extra yummy when you add baby corn,fried cashew, raisin and pineapples.

Ingredients:-
Rice-2 cups (I used sona masoori) cooked 3/4ths and cooled
Onion -1 small sliced
Bell peppers,mixed -1 1/2 Cups
Carrot sticks- 3/4 Cup
Basil - 1/2 cup chopped
Red curry paste(store bought)- 1/2 tin
Thai chill sauce- 1 Tbsp
Soya sauce(dark)-1 Tsp
Salt
Brown sugar-2 Tbsp
Procedure:-
1) Heat oil in a non stick pan on a medium heat
2) Saute onion till it softens , add carrot, saute for couple of minutes.
3) Add bell peppers and cook till 1/2 done.
4) Add basil, red curry paste, chilli sauce, soya , brown sugar and salt. Fry for a minute.
5) Add the rice and mix.

Chickpeas & Tomato Pulao

Pulao is my all time favorite dish, it is easy to make in many variations. I found this recipe here. I took some leftover chickpeas and gave it a try..it turned out very good.. I made some changes to add my personal touch..
It can be served as side dish or with any curry of your choice or wrap in a tortilla.
Ghee/Oil/Butter:- 1 tbsp
Jeera/Cumin Seeds:- 1/2 tsp
Mustard Seeds:- 1/2 tsp
Bay leaf:- 1
Black Cardomom:- 1
Cinnamon stick:- 1 inch
Garlic Cloves(Chopped):- 2
Salt & Pepper as per taste
Tomato(Chopped):- 2 medium
Chickpeas(Boiled):- 1 1/2 cup
Rice:- 1 Cup
Vegetable Stock/Water:- 2 cups
Lemon Juice of 1/2 lemon( or as per your taste)
Procedure:-
1) Melt ghee in a pan, put bay leaf , cinnamon stick & black cardamom.
2) Add jeera, mustard and let it splutter.
3) Add garlic and fry until light brown.
4) Add tomatoes and cook over medium heat stirring in between.
5) Add chickpeas, salt & pepper to the tomato mixture and cook for 5-7 minutes.
6) Add stock/water & lemon juice to the tomato & chickpeas.
7) Bring it to the boil and add rice
8) Cover & reduce heat, cook for about 20 minutes.
9) Turn off the heat and let the rice sit undisturbed for 30 minutes.
NOTE:- This dish tastes best when it is made with fresh tomatoes..
Serve hot or at room temperature...Enjoy:)

Carrot Fried Rice

Here is my version of Carrot Fried rice..These rice are not only appealing to eyes because of beautiful orange color of carrots but also to the stomach..It has the perfect balance of salt & sweetness..This is my entry for JFI:Carrots

Carrot is most popular & versatile vegetable used for not only to make sabjis(savory dishes) but also to make different kinds of sweets/desserts.Carrots contain more sugar than any other vegetable but they are natural sugar which are easily assimilated.
It not only tastes good, it has so many health benefits and is highly cleansing.it is an excellent source of pro-vitamin A, vitamins C, D, E, K, B1 and B6.It is rich with biotin,potassium, calcium, magnesium, phosphorus organic sodium, and some trace minerals.
To store carrots put it in a plastic storage bag and keep them in the coldest part of the refrigerator with the highest humidity. They should keep fresh up to two weeks.
Ingredients:-
Carrots( Grated):- 1 cup + 1/4 cup
Cooked Rice:- 5 cups
Onion:- 1/3 cup
Peas:- 1/2 cup
Almonds(chopped):- 1/4 cup
Garam Masala:- 1 tsp
Salt as per taste
Ghee:- 2 1/2 tbsp (Or vegetable oil)
Cumin seeds:- 1/2 tsp
Mustard seeds:- 1/2 tsp
Dried Cranberries:- 2 tbsp
Lemon juice of half lemon
Green cardamom:- 3
Cinnamon stick:- 1 inch
Bay leaf:- 1
Cloves:- 3
Procedure:-
1)Cook the rice and cool it completely.
2) Heat ghee in a pan. Add Cumin, mustard, Bay leaf, Cloves, cinnamon & cardamom.
3) When seeds starts spluttering add almonds and fry until light brown.
4) Add cranberries and saute for a minute.
5) Add Onion and fry until onions are translucent.Don't brown the onions.
6) Add carrot, peas & salt ,cook for 3-4 minutes.
7) Add cooked rice, garam masala ,lemon juice & mix well.
Serve hot or at room temperature..Enjoy:)
