Carrot Corn & Peas Stir Fry / Sabzi (Pressure Cooker Recipe)
A simple and healthy stry fry that you can serve at any meal along with roti,poori, paratha or Indian bread. I love to make sandwiches with the leftover sabzi for quick breakfast or snack.
Ingredients:-
Oil:-2-3 Tbsp
Cumin seeds/ Jeera -1/2 Tsp
Mustard seeds / Rai :- 1/2 Tsp
Ginger:- 1/2 Tbsp
Garlic:- 2 cloves finely chopped
Onion:- 1 small, chopped
Salt as per taste
Chiili powder:- 1/2 Tsp
Turmeric:- 1/2 Tsp
Garam Masala :- 1/2 Tsp
Carrot:- 2 Cups (Peeled and cut into pieces)
Corn:- 1 Cup
Peas:- 1 Cup
Procedure:-
1) Heat oil in a pressure cooker on a medium heat.
2) Add cumin and mustard seeds, when it starts to crackle add garlic and ginger, saute for a minute.
3)Add onion and fry until they are translucent ( it will take about 2-3 minutes)
4) Add salt, chilli powder, turmeric, garam masala & mix well.
5) Add carrot, corn and peas , mix everything well.
6) Close the lid of the cooker and let it cook for about 4-5 minutes.( or when you start hearing the sound of the steam , switch off the gas ).
7) Turn off the gas and let it rest on the gas stove top for other 5 minutes.
Serve hot with roti...Enjoy:)

Corn Aur Gajar Ka Paratha / Corn & Carrot Indian Style Bread (Step By Step Pics )
Parathas are the best way to add vegetables in your kids diet.My 5 year old daughter is not a big fan of corn but she loved these parathas when i served it with yogurt , as she can't taste any corn in it , that is the magic of grinding and adding directly in the dough.
Ingredients:-
Aatta / Whole Wheat Flour:- 2 Cups
Salt
Haldi / Turmeric Powder:- 1/2 Tsp
Lal Mirchi / Red Chilli Powder:- 1/2 Tsp
Ajwain / Carom Seeds:- 1/2 Tsp
Chaat Masala:- 1 Tsp
Onion( finely chopped):- 2 Tbsp
Shredded Carrot:- 1/3 Cup
Corn kernels( I used canned ones):- 2/3 Cup (blend it into a smooth paste)
Water as needed
Oil
Procedure:-
1) Place everything (except water) in a big bowl or plate.
2) Mix everything well.
3) Add little water at a time to make smooth dough.
4) Let it rest for atleast 10 minutes.
3) Make a small lime size ball out of the dough.
4) Roll it into a circle shape.
5) Heat tava or non stick pan on medium heat & cook the paratha from both sides by brushing it with oil..
Serve warm paratha with curd or any sabzi you like..

Red Kidney Beans & Corn Salad With Rice
This is a great salad recipe , have the salad as it is if you don't want to mix it with rice or you can put big scoop of salad over the rice..enjoy anyway you want
For Salad

Rajma/ Red Kidney beans:- 2 Cups (cooked)
Corn:-1 Cup
Tomato:-1( chopped)
Onion:- 1/2 chopped
Capsicum:- 1/2 chopped
Olive Oil:- 1 Tbsp
For Tempering
---------------------
Oil:- 1 Tbsp
Cumin seeds:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Salt as per taste
cooked Rice:- 3 Cups (white or brown rice)
Lemon Juice:- 1/2 lemon
Garam Masala:- 1/2 Tsp
Procedure:-
1) In a medium bowl combine together beans, corn, tomato, capsicum & oilive oil, mix everything well and set aside.
2)Heat oil in a non stick pan on medium heat, when hot add cumin and mustard seeds, when they start to crackle add cooked rice, salt and beans mixture ( from step one), mix everything well..cook for 2-3 minutes.
3)Take the pan off the heat and mix lemon juice and garam masala.
Serve hot or at room temperature..Enjoy:)
