Pasta tossed with a lightly flavored red bell pepper sauce spiked with herbs and jalapenos




Pasta In Creamy Red Bell Pepper Sauce

Cooking Time: 7 mins

Ingredients:-

Cooked Pasta:- 3 Cups
Red capsicum cubes:- 2 Cups
Olive oil:- 2 tbsp
Thinly sliced onions:- 1 Cup
Finely chopped garlic/lehsun:- 1 Tbsp
Salt to taste
Black pepper powder to taste
Finely chopped jalapeno:- 1/4 Cup
Cashews :- 1/8 Cup ( soak in water for 15 minutes)
Dried mixed herbs/ Italian Seasoning:- 1 Tsp



Procedure:-

1) Heat the olive oil in a broad non-stick pan, add the onions , bell pepper and garlic and sauté on a medium flame for 1 to 2 minutes.

2) Add the onion, bell pepper & garlic mixture along with soaked cashews to the blender and blend in a mixer till smooth.

3) Pour the prepared sauce in a broad non-stick pan, add the salt, jalapeno, dried herbs and pepper powder, mix well and cook on a medium flame for 2-3 minute, while stirring continuously.

4) Add the pasta, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.

Serve immediately.

Notes:-

1)Choose firm and deep red coloured peppers, as they are sweeter and more concentrated in flavor.The result will be a more flavorful and brighter coloured sauce.

2)You can use any short pasta like fusilli or penne.

3)You can even try the red pepper sauce with a filled pasta like tortellini or ravioli. The choice is yours.

I was short of full ingredients so I skipped the part 3. I added salt though.
This tastes a bit sweet to my taste... but it's edible. :P What if I add some yogurt? lol
