This is simple potato stir fry recipe i learned from my Mom but it still tastes more delicious when she makes it for me:)...She use to make this stir fry alongwith with pooris for long trips or picnics..This is great recipe for kids lunch box too you can roll it in a tortilla or make a sandwich too
Ingredients;-
Potato:- 4 medium size
Oil:- 5-6 Tbsp
Jeera/Cumin seeds:- 1 Tsp
Mustard Seeds:- 1/2 Tsp
Ajwain/Carom Seeds:- 1/2 Tsp
Salt
Turemeric Powder;-1/2 Tsp
Red Chilli Powder;-1/2 Tsp
Garam Masala Powder:-1/2 Tsp
Kasoori Methi Powder:-1/2 Tsp
Aamchoor/Dry Mango Powder:-1/2 Tsp
Procedure:-
1) Boil and Cut the potatoes in small pieces
2) Heat the oil in a pan ( Use non stick pan if you have) on a medium heat.
3) After the oil is hot add Jeera, ajwain and mustard.
4) Now add Salt, turmeric,red chilli powder & potatoes and mix it well..
5) Keep stirring the potatoes often if you are not using the non stick pan otherwise it will stick to the bottom of the pan
6) Cook it uncovered in a pan for couple of minutes
7) Now add Garam masala, Methi powder & amchoor powder.
Serve hot or at room temperature with roti , Curd and pickle on side

Couple of days back I saw the recipe on train wale aloo and I got it makes seriously only some few days and it exactly turned out to exactly what I remember from my child hood.
I am from Rajasthan being a Marwari we used to travel a lot when we younger by train then everybody started using flight. However these train wale aloo with poories are still there in my memory.
Unfortunately our grandmothers and our older aunts ad earlier cooks are all gone so these recipes also seem to be gone forever.
Marwaris were making different types of aloo just like the simple aloo tamatar ki sabji without onion garlic or even aloo petha ki sabji with bedmi puri and their use to bedmi puris or there use to be one aloo ke sabji with yellow kind of gravy which had no tomatoes no onion no garlic and I don’t thing is similar to Mathura wale aloo which is very popular on the internet I think slightly different.
I have been searching for lost recipes including the typical Rajasthani bharwan parwal as well as Marwari dum aloo which is normally without onion garlic and there is no dahi also in fact. Anyway I shall keep corresponding with you in the meanwhile I would like to thank you for this great recipe which I think otherwise what I have got lost as I don’t think many families n able to conserve these traditional recipes.
