Lemon Flavoued Coarse Rice Flour (Uppudu Pindi Pulihora)


I visited my friend swati on Easter weekend and she made this dish for us ,we really enjoyed it and sent me the recipe to share with you guys

Ingredients:-

Coarse Rice Flour:- 2 Cups
(To make rice flour, wash the rice and dry it in sunlight and then grind it coarsely in the grinder)
Oil;- 1 1/2 Tbsp or as needed
Mustard Seeds:- 1/4 Tsp
Urad Dal:- 1/2 Tsp
Channa Dal:- 1/2 Tsp
Red Chillies :- 2 or 3
Peanuts- 3 Tbsp ( Fry it without oil and set it aside)
Curry Leaves:- 4-5
Asafoetida a pinch
Turmeric:- 1/4 tsp
Lemon Juice as per taste
Salt as per Taste

Procedure:-

1) Take 4 cups of water in a pan, add salt, turmeric and rice flour and mix everything well ,cover the pan and let it cook on sim flame for about 5-7 minute.
2) Mix everything well again and let it cook for another 3-4 minutes uncovered.
3) After its cooked and all the water is absorbed, switch off the gas and let it cool .

To make Tadka/Tempring

1)Add oil in a pan on medium heat and then add mustard seeds, urad dal , channa dal, peanuts ,green chillies, dried red chillies and curry leaves. cook for couple of minutes.

2) Add this tadka in the cooked rice flour and then add the lemon juice and mix everything well. (Do the taste test at this point )..

that's a new dish I 'm discovering; sounds like a lemon rice but must have it's own uniqueness I guess. looks delicious with the papads and the curry beside!!! tempting spread!!
