Sooji - 1 cup
Oil - 1 tbsp
Cumin - 1/2 tsp
Mustard - 1/4 tsp
Channa Dal - 1 tsp
Urad Dal - 1 tsp
Raw Peanuts - 2 tbsp
Dry red Chilli - 1
Asafoetida/Hing - A Pinch
Curry leaves - 3-4
Ginger - 1 tsp
Green chillies - 1 ( or as per taste)
Onions finely chopped- 1/4 cup
Carrots finely chopped- 1/4 cup
Peas- 1/4 cup
Salt - 1/2 tsp + 1/4 tsp ( or as per taste)
Water - 2 cups
Ghee melted- 2 tbsp (optional)
Coriander for garnish
Procedure:-
1) Heat oil in a pan, add mustard , cumin
2) Add channa dal and fry till it changes color , add peanuts & urad dal and fry for sometime
3) Add dry red chilli, asafoetida, salt and green chillies and saute for a minute
4) Add ginger,onions, carrots & peas and saute for couple of minutes
5) Add water and let it stand till it comes to boil..
6) Now reduce the flame to low and when the water stops boiling slowly add sooji and mix at the same time so that it will not form any lumps
7) Cover and let it cook for 2/3 minutes
8)Turn off the flame pout melted ghee over the upma and let it stand for 7-8 minutes.
Garnish with coriander & Serve at room temperature..Enjoy:)
