Chocolate Peanut Butter Oatmeal Vegan Balls are a perfect example of how something that tastes really good can also be easy to make.These are fun for kids to make because you don't have to cook them.
Chocolate Peanut Butter Oatmeal Balls {Clean Eating}
Makes 14 {with small cookie scoop}.

Ingredients:-
Old-fashioned oats {could certainly use gluten-free if needed}:- 1 Cup ( i grinded mine in a coffee grinder but this is optional)
Cocoa {naturally unsweetened}:- 1/4 Cup
Shredded coconut {unsweetened}:- 1/4 Cup
Natural peanut butter {look for a jar with peanuts (and maybe salt) as the ONLY ingredient/s}:- 1/2 Cup
Organic Pure Maple Syrup:- 1/4 Cup
Procedure:-
1) Stir all dry ingredients together to mix well.
2) Add the wet ingredients and blend well. *Sometimes it's best to use your hands to ensure the ingredients get fully incorporated.
3) Use a small cookie scoop to get even sized balls. Roll each ball by hand.
4)Chill in fridge until ready to serve.

3 Ingredient Vegan Energy Balls ( No Bake Recipe)
The best DIY desserts are easy, quick, and of course, delicious. If you’re low on energy, these 3 ingredient vegan energy balls are the perfect dorm-friendly, vegan, gluten-free and dairy-free snack. The only danger with making these raw vegan energy balls is not eating the whole batch at once.
3 Ingredient Vegan Energy Balls
Preparation Time:- 2 Minutes
Cooking Time:- 0
Ingredients:
Almonds Or any of your favorite nuts:- 1 Cup
Dates, pitted and chopped:- 1 cup
Raisins Or Cranberries:- 1 Cup
Procedure:-
1) Pulse nuts until they are in rough pieces (don’t let it go until powder or butter).Remove and set aside.
2) Place dates in food processor and blend until it forms a ball.
3) Repeat the process with raisins too. Now mix everything together and pulse until just barely combined.
(If too sticky, you can add more nuts or oats; if too dry, more dates)
Or Alternatively
Combine all ingredients in a food processor or high tech blender. Mix well until the mixture forms a giant, evenly mixed balls. You may have to stop mixing and scrape down the blender once or twice.
4) Form mixture into evenly sized balls.
Refrigerate!

Variation ideas:-
Add chocolate chips.
Add flakes of coconut, and/or chopped, dried fruit
Add spices, such as cinnamon
You can use wheat germs, crushed flaxseeds or oats too.
Allergic to nuts? Substitute sunflower seeds or pumpkin seeds for the almonds. You can double or triple the recipe too.
If the balls are too soft right out of the processor, toss in the refrigerator until they firm up.
Dairy-Free: Use dairy-free chocolate chips

Ingredients
Pecans:- 1 Cup
Medjool Dates, pitted:- 1 Cup
Cocoa powder:- 5 Tbsp
Pinch or Two of Sea salt
Maple syrup (optional):- 1-2 Tbsp
Procedure:-
1) In a food processor, grind up pecans until coarsely chopped.
2) Add pitted dates and process until well combined, but still crumbly looking.
3) Combine cocoa powder and salt in a separate, small bowl and then sprinkle over pecan and date mixture.
4) Spoon maple syrup over mixture as well. Process until well combined and ingredients starts to barely ball up in the processor.
5) Spoon out into a square glass tupperware or baking dish, no larger than 8"x8". The smaller the dish, the thicker the brownies so it's up to you! Press the mixture down into the dish until firmly packed together. A flat potato masher works well to get it nice and even.
6) Can be cut and served immediately or placed in the fridge and served chilled; which will also make them more firm.
