Achari gobhi is a famous north Indian recipe in which gobhi/cauliflower is cooked in a very flavorful and fragrant pickling sauce.To give flavor of Achar (pickle) Fenugreek, Kalonji and Fennel seeds are added along with other spices.
Ingredients:-
Oil:- 2 Tsp
Cumin Seeds:- 1/2 Tsp
Kalonji/Nigella seeds:- 1/2 Tsp
Gobhi/ Cauliflower(cut into small florets):- 1/2 (approx 3 cups)

Make a paste of 1 medium size onion & 1 tomato (balanced)
Or just microwave for 1 minute and make a paste.

Dry roast and grind together 1/2 Tsp each
(Fennel seeds, Fenugreek seeds, coriander seeds, nigella seeds, cumin & mustard seeds)

For Tadka:-
Mustard oil:- 2-3 Tbsp
Garlic:- 1 Tbsp (chopped)
Ginger:- 1 Tbsp (chopped)
Turmeric powder:- 1 Tsp
Red chilli powder:- 1 Tsp
Salt as per taste
Vinegar/Lemon Juice:- 1 Tsp
Procedure:-
1) Heat 2 Tsp of oil in a kadai/wok, when hot add cumin and nigella seeds, add cauliflower florets and saute for 3-4 minutes. Keep it aside in a bowl.
2)Dry roast the whole spices, grind to make a fine powder, keep it aside.
3)Blanch onion and tomato and make a paste of it together in a blender.
4) Heat 2-3 Tbsp of mustard oil in a kadai/wok/non stick pan, when hot add garlic and ginger, cook until light brown for about 1 minute.
5) Add the paste (made with onion and tomato), turmeric, red chilli powder. Mix everything well.
6) Cook until all the moisture is absorbed.
7) Add sauteed cauliflower, 2 Tsp of ground masala, vinegar & salt,mix everything well.
8) Cook covered for 3-4 minutes ,stirring in between ( add very little water if sabzi is sticking to the bottom ).
9) Cook uncovered until the cauliflower is cooked (soft but not mushy)
Serve hot with any Indian bread.

Didn't know about pickling with caulis. Still I love the pickled taste, that sour tinge is my liking. I prefer lemon juice to vinegar.
