Gobhi Matar/ Cauliflower with Peas


Cauliflower is known as gobi or gobhi in Hindi.Gobi is an integral vegetable in the Indian menu.They are easy to prepare yet sumptuous. Gobhi is used in variety of Indian dishes from rice to sabzis..

Cauliflower (Gobhi) is a highly nutritious vegetable, contains many nutrients that can help prevent a range of diseases from cancer and detoxification process. Cauliflower also contains vitamin C and folate.Three florets of cauliflower a day will provide you with 67% of your daily vitamin C requirement

When purchasing cauliflower, make sure the tops are white. If the floret has begun to spot brown or purple, it is past its nutritional peak.

Gobhi is my husbands fav veggie but in my list gobhi doesn't come on the top but i like gobhi parathas &i can have those everyday:)..This is my mom's recipe..

TIP:- Wash the cauliflower a night before and let it dry overnight..it will prevent the sabzi to get watery while cooking..

Ingredients:-

Oil:- 4tbsp
Cumin seeds/Jeera:- 1 tsp
Mustard seeds:- 1tsp
Ginger(chopped finely):- 2tbsp
Garlic(chopped finely):- 1tbsp
Green chillies(chopped finely):- 2
Curry leaves:- 2-3
Onion(Chopped):- 1
Tomato- 2
Salt as per taste
Turmeric powder:- 1tsp
Garam Masala:- 1tsp
Red Chilli powder:- 1/2 tsp
Cauliflower:- 1
Peas(thawed):- 1 cup
Coriander for garnish

Procedure:-

1) Cut the cauliflower florets and set aside.
2)Heat oil in a pan on medium heat, add jeera, mustard, curry leaves and let it splutter.
3) Add ginger & garlic and saute for 1 minute.
4) Add onion and fry until light brown.
5) Add tomato, salt, red chilli powder, turmeric, garam masala and mix everything well.
6) Cook till tomatoes are tender (about 3-4 minutes).
7) Add cauliflower and peas and mix everything well, let it cook uncovered till cauliflower is cooked properly ( it should be soft but not mushy)..

Garnish it with coriander and serve hot with roti/Indian bread.

ooh this is a mouthwatering curry. today i am going to the market and buying cauliflower :) it's been a year since i ate it :( i love cauli...but had to avoid it cause hubby is allergic to it.

Thank you for the lovely comments..Its okay if you don't have condensed milk. You can boil the regular milk to condense into 1/4th of its original quantity and use it.
