Gajar Ka Halwa/Carrot Pudding

This is very famous North Indian (Punjabi) dessert loved by everyone i know of & my all time fav dessert too..Delicious & rich with lots of dried fruits/nuts ..

It does take a long time to cook but its always worth waiting..It can be made in the form of barfis also ( will post that recipe soon)..I like to serve it warm but you can serve it at room temperature also..

Ingredients:-

Carrots:- 8 cups(peeled & Grated)
Ghee:- 1/2 cup
Milk(Full Fat):- 7 cups
Cardamom powder:- 1 tsp
Sugar:- 3/4 cup ( adjust it as per taste)

For Garnish:-

Raisins:- 1/4 cup
Cashews:- 1/4 cup

Procedure:-

1) In a heavy bottom pan, melt the ghee over medium heat.
2) Add grated carrots and saute until they are half cooked (about 20 minutes)
3) Add Milk & sugar and mix everything well.
4) Let it cook on low heat until all the milk is evaporated( keep stirring in between to prevent it from sticking on the bottom of the pan).It takes about 1 1/2 hour to cook completely.
5) Take off from the heat.
6) In a separate pan heat little bit of ghee and fry the cashews and raisins until light brown.
7) Garnish the halwa with fried cashews and raisins on top

Serve hot or at room temperature as a dessert..Enjoy:)
