Two Minute Vegan Microwave Chocolate Mug Cake



When you're in the mood for cake, but don't have a lot of time, these quick and easy mug cake recipes are the perfect, sweet solution. Try one today!



Two Minute Vegan Microwave Chocolate Mug Cake

Preperation Time:- 1 Minute
Cooking Time: 2 Minutes
Serves: 1 mug (you should share it with another person)

Ingredients:-

All-purpose flour/Maida:- 3 Tbsp
Unsweetened cocoa:- 1 1/2 Tbsp
Sugar:- 3 Tbsp
Baking soda:- 1/8 Tsp
Salt:- 1/8 Tsp
Vegetable oil:- 3 Tbsp
Non Dairy Milk:- 3 Tbsp
Vanilla:- 1/4 Tsp

Vegan Chocolate Chips:- 1 Tbsp ( Optional)

Coffee mug and a microwave



Procedure:-

1) In the mug, mix together all purpose flour, cocoa, sugar, baking soda and salt.

2) Add oil, milk and vanilla and mix well with a spoon. Make sure there are no lumps underneath. Add chocolate chips if using.

3) Microwave at 600W for 1 minute. Then turn the microwave to highest power and microwave 1 more minute. The cake started rising over the top but went down when the microwave turned off.

4) Take out and allow to cool. Drizzle some powdered sugar on top before serving.

Notes:-

1) All microwaves are different so you might have to find your perfect time to cook in case 2 minute doesn't work for you. Check the cake by carefully touching the top. It should be firm and springy, not at all doughy. If it’s not done, keep cooking it in 15-second increments.

2) You can substitute All purpose flour with whole wheat flour or use the combination of both.

3) If you like to bake the cake instead ,then bake it at 350 for 10-12 minutes.

4) Use microwave safe big mug as this cake rises well so don’t fill mug more than half full.

This is really easy-to-prepare no bake vegan snack that will be ready in under 5 minutes.Also great to pack in your kids lunch box and i promise they will never know that mommmy packed a healthy dessert..:)



Healthy Vegan Mini Snack Balls / No Bake Dessert

Makes:- 15 mini balls

Ingredients:-

Whole Wheat Flour:- 1/4 Cup
Flax Seed Powder:- 1/8 Cup
Cocoa Powder:- 1/8 Cup
Toasted Sesame Seeds:- 1/8 Cup
Maple Syrup:- 1/8 Cup
Sugar (optional)



Procedure:-

Grind sesame seeds in the coffee grinder into a fine powder.

1) Mix whole wheat flour, flax seed powder ,cocoa powder and ground sesame powder in a bowl.

2) Add maple syrup and mix well.

3) Take 1/2 Tbsp of the mixture in your hands and roll into mini balls.

4) Then roll the balls in the sugar. ( This step is optional).

No Bake Chocolate Nut Balls ( Vegan Dessert )



Here's an easy no-bake treat for everyone.These simple and healthy little no bake energy bites are perfect for a delicious snack Or Make these for potlucks, get together's , picnics or just pack it in the lunch box as these easy peasy quick bites will be ready under 5 minutes & are great when you're short on time and you don't even have to turn on the oven in this hot weather. Make them a day ahead to let the flavors blend.



Ingredients:-

Unsalted Peanuts:- 1/2 Cup
Almonds:- 1/4 Cup
Oats:- 1/4 Cup
Dessicated Coconut:- 1/4 Cup
Powdered Sugar:- 1/4 Cup
Flaxseed Powder:- 1 Tbsp
Cocoa Powder:- 1 Tbsp
Maple syrup/Honey:- 1 Tbsp
Oil:- 2 Tbsp




Procedure:-

1) Place all the ingredients in the food processor and process until well blended. You may have to stop and scrape the sides of the container.

2) Remove the mix from the processor and roll into balls.

TIPS:-

1) Refrigerate if you are planning to keep it for long time, consume within 3-4 days.

2) If you don't like the raw taste , toast the peanuts,almonds & oats. You can toast in the oven or on the stove top. Cool them completely before grinding.

3)Add/replace any other nuts if you like( walnuts , pecans etc.)

No Bake Peanut Butter balls


Who doesn't love the recipes which requires no baking or cooking..Peanut butter is everyone's favorite so these healthy treats can be enjoyed anytime. Kids will surely love to help you in making & eating these easy and yummy goodies.


Ingredients:-

Peanut butter:- 1/2 cup
Nonfat dry milk powder:- 1/4 cup
Unsweetened flaked coconut:- 1/4 cup
Rolled oats:-1/3 cup
Ground cinnamon:-1/2 tsp
Honey:-1/4 cup

(you can add any nuts of your choice too)

Procedure:-

1) Combine peanut butter, milk powder and coconut in a large mixing bowl.
2)Mix oats, ground cinnamon & honey until thoroughly combined.
3)Shape the mixture into small balls.( Use ice cream scooper for making same size balls).
4) Chill in the refrigerator before serving for about an hour.

Store leftover treats in the refrigerator.
