Zucchini, Red Bell Pepper & Okra Stir Fry



You can make this simple zucchini stir fry under 15 minutes and is super healthy too.



Ingredients:-

Zucchini:- 2 (thinly sliced)
Red Bell Pepper:- 1 (thinly sliced)
Okra:- 7-8 (cut in small pieces)
Onion:- 1 (small thinly sliced)
Cumin seeds:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Oil
Splash of Soya Sauce
Salt as per taste
Pinch of Turmeric
Flaxseed:- 3/4 cup
Coarsely ground peanuts:- 2-3 Tbsp


Procedure:-

1)Heat 1 tbsp oil in a pan and stir fry okra until golden brown and crisp. Remove in a bowl and set it aside.

2)Heat 3 Tbsp of oil in the same pan, when hot add cumin and mustard seeds.

3)When seeds starts to splutter add onion, zucchini, red bell pepper, saute for 6-7 minutes.

4)Add okra and splash of soy sauce , mix everything well.

5)Now add turmeric, salt, ground peanuts and flaxseed, mix everything well.

6)Cook for 1-2 minutes and serve hot with chapatis/rotis.

Lobia/Black Eyed Peas Curry


Serve this tasty and healthy bean curry as a side dish with rotis or rice.Lobia can be prepared in many ways, you can find the dry version here .This is really easy dish to prepare and is packed with protein.You don't have to soak lobia overnight, you can soak for couple of hours before cooking..



Ingredients:-

Lobia:- 1 1/2 - 2 cups
Oil:- 3-4 Tbsp
Cumin/Jeera:- 1 Tsp
Mustard seeds:- 1 Tsp
Ginger(chopped):- 1 Tsp
Garlic(chopped):- 1 Tsp
Onion(chopped):- 1 medium
Tomato(chopped):- 1 medium
Cumin powder:- 1 Tsp
Coriander powder:-1Tsp
Imli/Tamarind paste:- 1 Tbsp
Salt
Turmeric powder:- 1 Tsp
Red chilli powder:- 1 Tsp
Garam Masla Powder:- 1 Tsp
Tomato Paste:- 1 spoonful
Anardana powder:- 1 Tsp

Procedure:-

Soak the Lobia in water overnight or for 2-3 hours before cooking and then boil it by adding 1 tsp of turmeric and salt (as per taste)..

1) Heat oil in a pan jeera /cumin seeds, Mustard , when they start to splutter then add ginger and garlic and fry for a minute.

2)Now add onions, stir it till it becomes brown in color.

3)Add tomatoes , turmeric,Chilli powder ,garam masala, cumin powder, coriander powder & little water(1-2 tbsp approx) , mix it well.

4)Saute the mixture till tomatoes become soft (Approximately for 5-7 minutes)

5) Add boiled lobia , imli paste, tomato paste and anardana powder and mix everything well( add water to make a gravy ).
let it simmer for couple of minutes.

Serve hot garnished with coriander leaves with roti or rice ...Enjoy:)

Palak Kadhi (Spinach In A Yougurt Gravy)


Kadhi can be made many ways as per your choice , i usually make the more traditional way which is also called kadhi pakora but when i don't have enough time to make pakoras then i make little variations, like i added spinach in this kadhi recipe which makes it more healthy and also gives very nice flavor to the gravy

Ingredients:-

Oil :- 2 3 TBsp
Jeera/Cumin:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Methi or Fenugreek seeds:- 1 Tsp
Hing/Asafoetida:- A pinch
Ginger:- 1 inch piece( finely chopped)
Garlic:- 1/2 Tsp
Onion:- 1/2 chopped
Tomato:- 2 small chopped
Curd:- 1 Cup
Besan:- 2 1/2 Tbsp
Water:- 4 Cups
Salt as per taste
Turmeric powder:- 1 Tsp
Red Chilli Powder:- 1 Tsp
Garam Masala Powder:- 1 Tsp
Palak/ spinach :- 3 Cups chopped

Procedure:-

In a mixer blend together curd,besan & little water( if needed) and set aside.

1) Heat oil in a pan.
2) Add , asafoetida, Cumin seeds, mustard seeds & fenugreek seeds.
3) When seeds start spluttering add ginger & garlic and fry till light brown
4) Add onion and fry till onion are translucent (don't brown them)
5) Add tomato, salt, turmeric, red chilli powder, garam masala & mix well
6) Cook until tomatoes are tender.
7)Now add the blended mixture, palak/spinach and mix well..
8) Add water to make a gravy..don't worry if the gravy is not thick at this point..it will thicken as it cooks
9) Let it cook at medium heat for 10-15 minutes

Serve hot with rice...Enjoy:)

Egg Curry - Version I

Eggs are one of the most nutritious foods money can buy. They contain a wealth of vitamins, minerals and protein.

I love eggs and if you eat eggs you may consider yourself to be a vegetarian or non vegetarian..here is one version of the egg curry which i generally make. the gravy is little sweet and goes well with kids, my 15 month old daughter likes it a lot..you can adjust spices and make this gravy spicy as per your taste..The same gravy also works well with paneer dishes.

Ingredients:-

Eggs:-4 (Boiled)
Oil:- 2 tbsp
Unsalted Butter:- 1 1/2 tbsp
Garlic:- 1 tbsp (chopped)
Onion:- 1 (chopped)
Red Bell Pepper:- 1 medium size(chopped)
Chopped tomatoes :- 1/2 can
Tomato Puree:- 2 tbsp
Tomato ketch:- 2 tbsp
Lemon juice of half lemon
1 cup of Milk
Methi powder:- 1/2 tsp
Salt as per taste

Spices( Plz adjust as per your taste)

Red chilli powder:- 1/2 tsp
Paprika:- 1/2 tsp
Ginger powder:- A pinch
Coriander powder:- 1/2 tsp
Garam Masala Powder:- 1/2 tsp
Turmeric:- 1 tsp
Cumin Powder:- 1/2 tsp
Sugar:- 1/2 tsp
Garlic powder:- 1/2 tsp

Procedure:-

1)Heat a frying pan with oil & butter, add garlic.
2) Add onions and red bell pepper, cover & cook the onions until they are transparent
3) Now remove from the heat and puree all the mixture fine paste
4) Return it to the pan and continue to gently fry until golden.
5) Meanwhile mix all the spices thoroughly in 1/4 cup of milk to form a paste.
6) Add the spice mixture into golden puree & cook for 2-3 minutes
7) Now add the remaining milk, 1/2 can of tomatoes, tomato puree & salt, mix well
8) Stop stirring, allow the sauce to curdle for 3-4 minute on low heat, then stir & simmer for 20-30 minutes.
9) Add eggs, Methi powder, lemon juice & tomato ketchup..let it simmer for 2 minutes

Let the eggs marinate in the curry for about 15-20 minutes before serving

Serve hot with rotis or rice...Enjoy:)
