This super quick stir fry can be made under 10 minutes. In this recipe black eyed peas are cooked with tomato puree and indian spices to make a delicious stir fry.

Ingredients:-
- Lobia/ Black Eyed Peas:- 1 1/2 Cup
- Oil:- 2- Tbsp
- Mustard seeds:- 1 Tsp
- Cumin seeds:- 1 Tsp
- Turmeric powder:- 1 Tsp
- Red Chilli Powder:- 1 Tsp
- Garam Masala powder:- 1 Tsp
- Coriander Powder:- 1 Tsp
- Tomato(made into puree):- 2
- Salt as per taste
1) Boil lobia by adding salt (as per taste)..
2)Heat oil in a pan ,add jeera /cumin seeds & Mustard , when they start to splutter then add tomato puree , turmeric powder, red chilli powder, garam masala powder & coriander powder. Cook everything for 2-3 minutes .
3)Add boiled lobia and mix everything well, do the taste test at this point.
6)Cook for couple of minutes and garnish it with coriander
Serve hot with Rotis/Indian Bread...Enjoy:)
