Banana Bread In A Cup (Microwave Recipe)



I have been trying a lot of cup/mug recipes lately (35 Second Eggless Chocolate Cake,Two Minute Eggless Brownie Recipe,Cookie In A Cup).I love the fact that it is so quick and simple ,made with few ingredients and is single serving so you can enjoy it anytime of the day or night:)..

Ingredients:-

Non-stick cooking spray
All Purpose Flour:- 3 Tbsp
Sugar:- 1 Tbsp + 1 Tsp
Brown sugar:- 2 Tbsp
Salt:- 1/8 Tsp
Baking powder:-1/8 Tsp
Baking soda:-1/8 Tsp
Egg:- 1
Vanilla extract:- 1/4 Tsp
Vegetable oil:- 1 Tbsp
Milk:- 1 Tbsp
Ripe banana, mashed:- 1
Walnuts-2 tbsp (optional) Sprinkled on the top.


Procedure:-

1) Spray a microwave safe mug with cooking spray.

2) In a bowl, or right in the mug, whisk flour, sugar, salt, baking powder, and soda. Add egg and combine until just incorporated with dry ingredients.

3)Mix in vanilla, oil, milk and mashed banana.

4)Pop into the microwave for up to 3 minutes, with no fear to stop and check after 90 seconds for doneness.

5) The inside of this will be very hot when you first remove it from the microwave. Give it a few minutes.

Some variations you can do to the recipe ( i haven't tried these but these were mentioned in the comments by those who tried it)

1)Used quinoa flour,add nutmeg and use applesauce instead of oil.

2)Added a handful of chocolate chips to the batter, and spooned some homemade caramel sauce over the top when it came out of the microwave.

3)Banana acts like an egg in quick bread recipes so this recipe can be made without egg.
