Instant Dhokla Recipe/ Steamed Gram Flour Cakes


Khaman Dhokla is a traditional Gujarati snack that is served for festive meals are best paired with a coriander chutney.This recipe makes a really soft and spongy dhoklas. You can use 1 Tsp of Lemon Juice instead of citric acid but the magic ingredient in this recipe is Eno fruit salt which gives the dhokla a perfect fluffiness.

Ingredients:-

For the batter
------------------------------
Bengal gram flour/Besan:- 1 Cup
Semolina/rava;-1 1/2 Tbsp
Citric acid/nimbu ka phool:-1/2 Tsp
Sugar:-3 Tsp
Ginger-Green chilli paste:-1 tsp
Eno's fruit salt;-1 1/2 tsp

For the tempering
------------------------------------
Oil:-1 Tbsp
Mustard seeds/rai/sarson):-1/2 Tsp
Sesame seeds/til
Green chillies,chopped:- 2
A pinch Asafoetida(hing)

For the garnish
--------------------------------
1 Tbsp Chopped coriander leaves (dhania)

Procedure:-

1. Mix together all the ingredients for the batter except the eno fruit salt using enough water to make a thick batter.

2. Add the eno fruit salt, sprinkle a little water over the fruit salt and mix well.

3. When the mixture rises, pour it into a greased thali and steam for about 10 minutes.

4.For the tempering, heat the oil in a small pan and add the mustard seeds, sesame seeds, green chillies and asafoetida. when the mustard seeds crackle, add 1 tablespoon of water and pour this over the steamed dhoklas.

Cut into pieces & Garnish it with coriander leaves

Serve with green chutney.

TINA:- I would recommend you to add baking soda instead of baking powder,baking powder won’t be able to leaven the dhokla batter & you can add buttermilk instead of water to make the dhokla batter.

Hi Neha... I have never used dhokla mix so i am not sure but i have used idli mix and it already have all the ingredients to make a instant idli and i am sure it is the same case with dhokla mix too...

Hi- how long after mixing initial ingredients do you need to add Eno? And How long after adding Eno is the batter ready to be steamed usually? Thanks! Planning on trying today.

Sowmya:- After mixing all the initial ingredients you can immediately add eno and then mix lightly into the batter and you will notice the fizz in the batter and as soon as eno is mixed immediately add to the thali/vessel and steam ..
