Gajar Beans & Aloo ki Sabzi


If you are not in mood of cooking usual then try aloo gajar & beans combo..this is one of my favorite sabzi , delicious and healthy too..Serve it with hot chapatis and raita. Enjoy your wholesome meal.

Serves :- 4

Ingredients:-

Oil:- 2 -3 Tbsp
Jeera:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Ginger :- 1/2 tsp (chopped finely)
Garlic:- 2 cloves (chopped finely)
Onion:- 1 /2 onion chopped
Tomato:- 1 chopped
Salt as per taste
Red Chilli Powder:- 1 tsp
Turmeric Powder:- 1 tsp
Garam Masala:-1 tsp
Gajar/carrot:- 2 ( chopped)
Potato:- 1 Medium (chopped)
Beans:- handful chopped or 1 cup approx

Procedure:-

1) Heat oil in a kadai/frying pan on a medium heat.
2) Add cumin and mustard seeds, when it starts to crackle add garlic and ginger, saute for a minute.
3)Add onion and fry until they are translucent ( it will take about 2-3 minutes)
4) Add tomato, all the spices & cook until tomatoes become tender.
5) Add carrot/gajar, aloo/potato, & beans in the tomato mixture and cook covered for about 10-15 minutes, until well cooked,do the taste test to check:)

Serve hot with roti/chapati/paratha..Enjoy:)
