(Almost )Raw Vegan Healthy Salad Recipe




Salads and diets have always had a delicious partnership. But salads are healthful and satisfying even if you’re not watching your waistline. This salad we eat everyday in dinner & it has 13 healthy combination of ingredients including fruits and vegetables.. This main-dish salad will help you feel full and satisfied so dig into one tonight, and you’re well on your way to starting your own salad habit.

List Of Ingredients Used:-

1.Corn ( I cook the whole corn on gas top for more flavor )
2.Red Bell Pepper
3.Green bell Pepper
4.Yellow Bell Pepper
5.Carrot
6.Mooli/diakon
7.Cucumber
8.Apple
9.Grapes
10.Dried cranberries
11.Chole/chickpeas (boiled)
12.Tofu
13.Cilantro Leaves

Dressing:- I sprinkle my bowl of salad with little salt and Chaat Masala but you can use any dressing you like

Procedure:- Finely chop all the ingredients and mix them well in a bowl. It will last upto 2 days in refrigerator ( do not add any dressing if you want to refrigerate ) . I didn't mention any measurement of the ingredients as you can use as per your taste/requirement. you can also mix n match any vegetables/fruits of your choice.

Crunchy Cucumber Salad With Crushed Peanuts / Kheere Aur Moongfali Ka Salad



This is really interesting recipe, with great combination of ingredients, fresh and complex tasting at the same time. Anyone who will eat this salad will ask for a recipe for sure.Do give it a try , it's quick , simple & healthy .

Ingredients:-

English Cucumbers/ Kheera:- 2 ( Chopped into 1/4-inch dice, about 3 cups)
Green Serrano Chile/ Hari Mirchi:- 1 medium , minced ( seed first if you prefer)
Peanuts:- 1/2 Cup , preferably raw (but toasted, unsalted ones will do)
Lemon Juice:- 2 Tbsp ( or more if needed )
Salt:- 1 Tsp
Sugar:- 1/2 or 3/4 Tsp
Cayenne :- 1/8 Tsp
Canola Oil:- 1 Tbsp
Mustard Seeds:- 1/4 Tsp


Procedure:-

1) Place the diced cucumbers in a medium bowl along with the chile.

2) Using a coffee grinder or food processor , pulse the peanuts until they are reduced to a coarse powder. ( You don't want big chunks of peanuts, nor do you want a fine powder; stop grinding somewhere in between)

3) Add the peanuts to the cucumbers along with the lemon juice,salt and sugar and mix well.

4) Taste and adjust the salt , sugar, and lemon juice as needed. The salad should be slightly tart.

Make the tadka

5) Place the cayenne in a little pile on top of the salad. Do not stir in yet.

6) Heat the oil in a small skillet or butter warmer over high heat.

7) When it begins to smoke , add the mustard seeds, covering the pan with a lid or spatter screen.

8) As soon as the seeds stop sputtering, pour the oil over the cayenne.

9) Stir the dressing in and serve at room temperature or cold.

Bite Size Appetizer Salad Recipe



I saw this amazing party appetizer salad idea in some magazines while sitting in the waiting area , they used different ingredients but i decided to make this with everything i have already available in my refrigerator.

This is really easy peasy bite size salad appetizer for any party or family gatherings. Even kids can help you making it,you can use all the ingredients what they love.It can be made ahead of time and store it in the refrigerator..

Ingredients:-

Grapes
Mint Leaves
Red Bell Pepper (Cut into small squares)
Cucumber (preferably Persian cucumbers, cut into thin rounds)otherwise cut into small squares if using English cucumber
Paneer/Indian Cottage Cheese or any other cheese( Feta, mozzarella etc)(Cut into small squares)


Toothpicks for Assembling..

Dressing Options:-
-----------------

1) Just Sprinkle some Salt & Pepper OR

2)Combine some lemon juice,olive oil,salt, pepper & some dried herb OR

3)Drizzle some balsamic olive oil over the skewers OR

4)Serve it without any dressing..tastes delicious.

Procedure:-

1) Use a toothpick to skewer the grape, then mint , red bell pepper, cucumber and finish with a cube of Cheese.

2) Stand the skewer on a platter.

3)Drizzle dressing over skewers just before serving or serve it in a separate bowl along with skewers .

Leftovers can be stored in a sealed container in the refrigerator

OTHER ingredients you can use is olives, cherry tomatoes, any other fruit like watermelon, any Cheese, basil leaves etc)

Fruit Chaat (Spiced Fruit Salad)


Fruit Salad consists of various kinds of fruit with different texture, taste and color.
This is super easy dish to make for easy snack time or even for a healthy dessert.These are great for picnics , potlucks or small parties.

Ingredients:-

2 - 2 1/2 cups mixed fresh fruit
(choose firm ones such as mango, apple, pear, whole grapes, banana , papaya, or melon) diced

Chilli powder:- 1/4 Tsp
Lemon Juice:- 1 Tsp
Honey:- 1 Tsp
Salt:- 1/ Tsp

Optional additions:-

Chaat Masala:- 1/ Tsp
Black pepper:- 1/4 Tsp

Procedure:- Lightly mix all the ingredients , chill then serve

Red Kidney Beans & Corn Salad With Rice


This is a great salad recipe , have the salad as it is if you don't want to mix it with rice or you can put big scoop of salad over the rice..enjoy anyway you want



For Salad
-----------------------------------
Rajma/ Red Kidney beans:- 2 Cups (cooked)
Corn:-1 Cup
Tomato:-1( chopped)
Onion:- 1/2 chopped
Capsicum:- 1/2 chopped
Olive Oil:- 1 Tbsp

For Tempering
---------------------
Oil:- 1 Tbsp
Cumin seeds:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Salt as per taste
cooked Rice:- 3 Cups (white or brown rice)
Lemon Juice:- 1/2 lemon
Garam Masala:- 1/2 Tsp

Procedure:-

1) In a medium bowl combine together beans, corn, tomato, capsicum & oilive oil, mix everything well and set aside.

2)Heat oil in a non stick pan on medium heat, when hot add cumin and mustard seeds, when they start to crackle add cooked rice, salt and beans mixture ( from step one), mix everything well..cook for 2-3 minutes.

3)Take the pan off the heat and mix lemon juice and garam masala.

Serve hot or at room temperature..Enjoy:)
