Eggless Vegan Omelette / Healthy Breakfast Recipe



These Eggless Omelette are surprisingly easy and quick to make.This is a very popular breakfast item, made with oat,whole wheat & chickpea flour instead of eggs.They can be served as it is or stuffed with any stir fried veggies of your choice. This recipe makes 2 medium size omelette and i promise after having this for your breakfast you won't be hungry until your lunch time.



Ingredients:-

Oat Flour:- 1/4 Cup
Chickpea Flour:- 1/4 Cup
Whole Wheat Flour:- 1/4 Cup
Flax seed Powder:- 1 Tbsp
Ginger, grated or finely minced:- 1 Tsp
Onion, bell pepper, carrot :-1 Tbsp Each, finely chopped
Salt
Pinch Of Turmeric
Pinch Of Red chilli powder
Black Salt:- 1/2 Tsp
Water:- 3/4 Cup (Approx)
Oil for frying


Procedure:-

1) Mix everything except water in a big bowl, add water 1/4 cup at a time and make a smooth batter.

2) Heat the oil in a non stick pan on medium heat.

3) Pour half of the batter on a pan,let it cook for 2-3 minutes until golden brown and then flip over and cook the other side.

4) Repeat the process.

Serve hot with Chutney,Sauce,Pickle or curd..

Urad Dal Uttapam / Urad Dal Pancake (Step By Step Recipe)



I had gestational diabetes in my second pregnancy so i was always looking for healthy recipes that help make my blood sugar level normal , so one of my dear friend shared this awesome urad dal uttapam/pancake recipe with me. This is great healthy breakfast that you can enjoy with any chutney you like.



Ingredients:-

Urad Dal:- 1 Cup
Carrot,Onion,Tomato:- 1/4 Cup each
Mint leaves:- 2 Tbsp
Cilantro leaves:- 2 Tbsp
Salt
Turmeric Powder:- 1/2 Tsp
Red Chilli Powder:- 1/2 Tsp
Garam Masala Powder:- 1/2 Tsp


Procedure:-

1) Soak Urad dal in water overnight.



2) Grind it into a smooth paste.



3)Cut all the vegetables & herbs.



4)Mix all the spices in the batter.



5)Mix all the vegetables & herbs in the batter.



6)Heat a oiled griddle/non stick pan over a medium heat..5) When hot pour 1/2 cup of batter and spread into a even layer( like a pancake)..



6) Let it cook at one side for 2-3 minutes golden brown and then flip over and cook the other side.



Serve hot with any chutney ..

All-purpose four, sifted:- 2 cups
Sugar substitute:-1 packet
Baking soda:- 1 Tbsp
Fat-free plain yogurt:-8 ounces
1 large very ripe banana, mashed
Skim milk:- 1/2 cup
Canola oil:- 1/2 Tbsp
Vanilla extract:- 1 Tsp
4 egg whites, beaten to soft peaks
cooking spray


Procedure:-

1) Combine the flour, sugar substitute, and baking soda in a large bowl.

2)Stir with a fork to combine. Add the yogurt, banana, milk, oil, and vanilla. Stir until just moistened.

3) Gently fold in the beaten egg whites. Lightly coat a non-stick skillet with cooking spray.

4) Working in batches and using a ladle, make 4-inch pancakes.

5)Cook until the bottom is browned and bubbles come to the top of the cakes.

6)Turn and continue to cook until browned. Keep pancakes warm in the oven while you cook the rest of the pancakes.

Broccoli & Red Pepper Quesadilla



Here is a healthy & fast version of quesadilla for you to enjoy anytime. You can use whole wheat tortilla to make it more healthier.

    Ingredients:-
  • Broccoli:- 1 Cup
  • Red Bell Pepper:- 1/2 Thinly Sliced
  • Onion:- 1/2 Thinly Sliced
  • Butter(unsalted):- 1 Tbsp
  • Salt as per taste
  • Black Pepper:- 1/2 Tsp
  • Italian Seasoning:- 1/2 Tsp
  • Pasta Sauce
  • Tortilla :- 2
  • Mexican 4 blend cheese:- 1/2 Cup


Procedure:-
1)Heat the butter in a non stick pan , when hot stir fry broccoli,red bell pepper and onion together for 5 minutes.



2)Add salt, black pepper & Italian seasoning in the stir fry and mix everything well.Take off from the heat and keep it aside.
3)Take tortilla and put 1 Tbsp of pasta sauce then some stir fry veggie and top it with 1/4 cup of cheese.
4)Fold the tortilla in half and cook both sides.

Zucchini Pancakes



Here is simple and healthy Zucchini pancake recipe to enjoy during breakfast or any time of the day.

Serves 2 (5-6 pancakes)

Ingredients:-
  • All purpose flour:- 1/2 cup
  • Sugar:- 3 Tbsp
  • Baking powder:- 1 Tsp
  • Baking soda:-1/4 Tsp
  • Salt:-1/4 Tsp
  • Egg:- 1
  • Greek yogurt:- 1/2 cup
  • Melted butter:- 2 Tbsp
  • Water or Milk (OPTIONAL):- 1/4 cup
  • Zucchini, grated:- 1 medium
Procedure:-

1) Preheat a nonstick skillet or griddle to medium-high heat (350 degrees). These pancakes are a little picky about temperature.

2)Whisk dry ingredients together (flour through salt) and set aside.

3)In a separate bowl, whisk egg, yogurt, and melted butter together. Combine dry and wet ingredients together and mix until just combined. Fold in grated zucchini. OPTIONAL: if the batter is too thick, add water or milk a little at a time, until the batter consistency reaches the desired thickness. For me, 1/4 cup was enough to thin the batter but keep them nice and fluffy, but you might not need it at all depending on how thick you like your pancakes.)

4)Scoop 1/3 cup of batter onto the griddle and gently spread the batter if necessary. When you see bubbles rising around the edges, flip the pancakes. I found that some of the pancakes took as long as 10 minutes to cook (5 minutes per side). Top with butter and maple syrup!

Eggless Whole Wheat Pancake/ Meetha Cheela



This is really simple and healthy pancake recipe..great for kids lunch box too..You can enjoy these either for breakfast or as a snack..Please see the note for more ideas.


Ingredients:-

Whole Wheat Flour:- 1/2 Cup
Milk powder:- 1/4 Cup
Sugar :- 2 Tsp
Fennel Seeds:- 1/2 Tsp
Milk:- 1/2 Cup
Oil for frying

Procedure:-

1)Mix all the ingredients in a bowl( except oil) to make a pancake like batter..

2)Heat a non stick pan on a medium heat with little oil ( or use cooking spray).

3)Pour a laddle full of batter on a pan.Cook until lightly browned on the bottom.

4)Turn and brown the other side.

Enjoy:)

Note:- Be creative with flavorings..add cinnamon powder instead of fennel seeds..

Also you can use half 1/4 cup of all purpose flour and 1/4 cup of whole wheat flour instead of using all whole wheat.

Top it with honely of powdered sugar.

Use low fat milk powder and low fat milk or water to make it more healthy.

Savoury Oats Pancake


Oats Utthapam/Oats Pancake/Oats chilla is very easy, quick , delicious and HEALTHY recipe. Great for breakfast as you can prepare the batter a night before and refrigerate it. You can add about 1/4 cup of rice flour too if you want to make it little crispy.

Ingredients:-

Rolled Oats - 1/2 Cup
Whole Wheat Flour- 1/2 Cup
Gram flour/Besan - 1/2 Cup
Flax seeds:- 2 Tbsp
Curd- 4 Tbsp
Baking Soda- 1/2 Tsp
Water:- 1 1/2 Cups
Onion:- 1 (finely chopped)
Grated Carrot:- 1
Grated ginger - 1 Tsp
Oil for frying
Salt to taste
Garam Masala Powder:- 1/2 Tsp
Red Chiili Powder:- 1/2 Tsp
Turmeric:- 1/2 Tsp
Chaat Masala:- 1/2 Tsp



Procedure:-

1)Mix Oats, Flour, Besan ,flax seeds and baking soda in a bowl.

2) Add curd and water to make a smooth batter..(Batter should not be too thin or too thick)Let it rest for 15 minutes.

3)Heat a non-stick pan & season with a little oil.

4)Pour the batter and spread it. Cook on medium heat till crisp and golden brown.

5)Flip and cook the other side.

Serve hot with chutney or pickle and curd. I served it with walnut-mint chutney..Enjoy:)

Best Version Of Semolina Pancakes/Crepes



In Morning serve these crepes, drizzled with honey or spread with apricot jam. Cooking the crepes on only one side leaves a lacy network of tiny holes, perfect for catching the sweet toppings; the fine semolina provides a lovely sandy texture.

Total:- 30 Min plus 1 Hour rising
Makes 12 pancakes

Ingredients:-

Warm Water:- 3 Cups
Baking Powder:- 2 Tsp
Fine semolina:- 1 3/4 cup
All purpose flour:- 1/3 cup
Active dry yeast:- 2 Tsp
Sugar:- 1Tsp
Salt:- 1 Tsp
Vegetable oil for cooking
1/3 cup honey warmed
6 tablespoons unsalted butter, melted





Procedure:-

1)In a bowl , combine 1/4 cup of the warn water with baking powder.

2) In a food processor, combine the semolina with the flour, yeast, sugar and the remaining 2 3/4 cups of warm water; process for 30 seconds until smooth.

3) Add the salt and baking powder mixture and process for 30 seconds longer.

4) Pour the batter into a large bowl, cover with kitchen towel and let rise at room temperature until doubled in bulk, about 1 hour.

5) In a small bowl , blend the honey with the melted butter.

6)Heat a 10 inch nonstick skillet and coat it with a thin layer of vegetable oil. Whisk the batter until creamy. Ladle 1/3 cup of the batter into the skillet, tilting th skillet to distribute evenly.

7)Cook the pancake over moderate heat until bubbles appear all over the surface and the bottom is pale golden, about 2 minutes.

8)Shake the skillet to loosen the pancake, then slide the pancake onto the plate.Drizzle with the honey butter and serve right away.

9) Repeat with more oil and the remaining batter and honey butter.

Oatmeal Pancakes

I am always on a look for recipes which include oatmeal( because of the great health benefits oatmeal provides), so whenever i find right one i always give it a try .These pancakes are wonderful when served with maple syrup and good company:).

Ingredients:-

Rolled oats:-1-1/2 cups
Milk:- 2 Cups
Whole Wheat Flour:- 1/2 cup
All-purpose flour:- 1/2 Cup
Brown sugar:- 1 Tbsp
Baking powder:- 1 Tbsp
Salt:- 1 Tsp
Cinnamon:- 1/2 Tsp
2 eggs beaten
Butter (melted);- 1/4 cup

Procedure:-

1) In a large mixing bowl, blend rolled oats and milk; let stand 5 min.

2) Stir together flours, sugar, baking powder, salt and cinnamon.

3)Add dry ingredients, eggs and melted butter to oats, stirring until combined.

4) Pour 1/4 cup batter for each pancake onto a hot, lightly greased griddle.

5)Cook each pancake until edges become dry and surface is covered with bubbles. Turn and cook second side until golden brown.

Banana-Carrot Loaf (LOW FAT)

Whenever i go to supermarket i always buy bunch of bananas because i know if by any chance they go bad, i can use them to make so many things or i must say i want them to ripe soon so that i can try something new with those babies..This recipe is from Costco Cookbook which we got on Thanksgiving..Here is another entry for JFI-Carrots

Ingredients:-

Non fat cooking spray
3/4 cup Apple sauce
1 cup Sugar
2 eggs or 4 egg whites
1 3/4 cups All purpose Flour
1 tsp salt
3/4 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 cup grated carrots
1 cup mashed bananas

Procedure:-

1) Preheat oven to 350 F, coat 9- by- 5 inch loaf pan with cooking spray
2) In a bowl combine applesauce, sugar & eggs, beat until light & fluffy
3) In separate bowl, combine flour, salt, baking soda, baking powder & cinnamon. Add to the batter and blend well
4)Fold carrots & banana into the batter.
5) Pour batter into the prepared pan
6) Bake for 60-65 minutes or until toothpick inserted into the center comes out clean.

Makes 10 servings

TIP:- Dust lightly with confectioners sugar or spread with whipped low fat cream cheese and chopped nuts.

Store in a refrigerator uncovered..Enjoy:)

Indian Style Pasta



Pasta is originally an Italian dish which is now adapted by every cuisine around the world. Pasta comes in many shapes and sizes. Whole wheat pasta is a good source of fiber. More pasta information can be found here

I had given up on Pasta as some bland dish until we got invited to a dinner party. My friend (Renuka) served pasta in dinner. I reluctantly took first bite and I was speechless with what I experienced. It tasted so good compared to what I had at Italian restaurants. So I decided to take a fresh look at Pasta. Now I and my husband both love to eat the Indian style home cooked pasta and always want to get the last bite. We look forward to eating Pasta as it is relatively easier to make, requires less preparation and cooking time. I don't use any kind of pasta sauce in my cooking but if you like you may want to use pasta sauce to enhance flavor and make it richer. Here is my version of Pasta with Indian twist.

Ingredients:-

Pasta:- 2 cups
Cumin seeds/Jeera:- 1/2 tsp
Oil:- 3 tbsp
Ginger(Finely chopped):- 1 tbsp
Garlic (Finely chopped):- 1 tbsp
Onion(Cut lengthwise):- 1/2
Ajwain:- 1/2 tsp
Tomato (chopped):- 1
Green Chilli:- 1-2
Carrot:- 1 (1/2 cup approx)
Broccoli:- 1/2 floret
Capsicum:- 1/2 cup
Zucchini:- 1/3 cup
Black pepper powder:- 1/2 tsp
Salt as per taste
Garam Masala:- 1/2 tsp
Soy sauce:- 2 tbsp
Tomato ketchup:- 1 1/2 tbsp
Parmesan Cheese:- 1/8 cup
Italian Seasoning:- 1 tsp

Procedure:-

1) Boil the pasta according to the instructions on the box..
2) Heat oil in a pan on medium heat..add cumin seeds & ajwain, when it starts spluttering add ginger & garlic and fry for a minute.
3) Add onion, green chillies, & carrot , saute for 2-3 minutes
4) Add broccoli , zucchini, capsicum & tomato & saute until little tender.
5) Add salt, black pepper powder, garam masala, soy sauce, Italian seasoning & mix well..
6) Put the boiled pasta and mix everything.
7) Add tomato ketchup, Parmesan cheese and mix well..

Serve hot..Enjoy:)

Sweet Dalia


Dalia is also called Broken Wheat or Cracked Wheat.Its high in fiber & is very nutritional & healthy morning breakfast .You can make it sweet or spicy/savory according to your taste..This is my mom's version of sweet dalia..

Ingredients:-

Dalia:- 1 cup
Ghee:- 2 tbsp
Almonds(chopped):- 1/8 cup
Raisins:- 1/4 cup
Water :- 3 cups
Sugar:- 1/2 cup

Procedure:-

1) Heat the ghee in a pressure cooker on a medium heat
2) Fry almonds & raisins until brown
3) Add Dalia and cook until golden brown , stirring continuously.
4) Now add water & sugar and close the lid of the cooker.
5) Let it cook on high for 4-5 minutes.
6) Switch off the gas and let it sit for at least 5 more minutes..

Serve hot or at room temperature..Enjoy:)
