Vegan Chocolate Mousse ( Only 2 Ingredient )



Your guests will never suspect that this awesome chocolate mousse has only two ingredients & is dairy-free too. Make the day before and chill in individual serving glasses

Vegan Chocolate Mousse

Preparation Time:- 5 Minutes
Cooking Time:- 2 Minutes
Serves:- 6

Ingredients:-

Silken Tofu:- 1 1/4 lbs.
Semisweet Chocolate Chips, melted:- 3/4 Cup

Procedure:-

1) In a blender , puree the tofu until smooth.

2) Add the melted chocolate and blend thoroughly .

3) Pour into 6 individual dessert bowls and chill.

Optional:- Dust with powdered sugar or top with a strawberry or other berries.

Enjoy:)

Gooey Chocolate Brownies(Kids In The Mix)



This is a great recipe to do with your kids and you can find helpful hints along the recipe to how to include your kids in the process.Tell your kids that timing is every - thing when it comes to baking fabulous brownies, then put them in charge of watching the clock so the goodies don't overcook.

Prep Time:- 10 Minutes

Ingredients:-

Semisweet Chocolate Chips:- 8 ounces
Butter,cut up:- 1 Cup
Large eggs:- 4
Sugar:- 1 2/3 Cups
Salt:- 1/4 Tsp
Self -Rising Flour:- 1 Cup
Unsweetened Cocoa Powder:- 2 Tbsp
Whipped Cream (optional)
Chocolate Shavings(optional)


Procedure:-

1)Heat oven to 350F & place rack in center.Kids can lightly grease a 12-by-8-inch baking pan, then line with parchment paper and grease paper.

2)Place chips and butter in a heatproof bowl set over a saucepan of simmering water(pan should be partially filled so water does not touch bowl).Heat, stirring occasionally , until melted, 7 to 8 minutes. Remove bowl from pan and let cool.

3) Help kids break egg and pour sugar into a mixing bowl. Then you can beat with an electric mixer on medium speed until light and fluffy. Beat in the cooled chocolate mixture. Reduce mixer speed to medium-low and beat in salt, then flour and cocoa powder until well combined. Pour into prepared pan and let kids smooth the top.

4)Bake until firm to the touch on the surface but gooey underneath, 23 to 25 minutes. Do not over bake. Transfer pan to a rack and let cool 15 minutes; help kids cut into squares.

5)To serve: Have the kids top the brownies with whipped cream and sprinkle with chocolate shavings ( if using).

Ultimate Lemon Pound Cake Recipe



When one of my friend gave me some juicy lemons from her garden, i had only two things in my mind , Pound cake and Lemonade.I decided to make pound cake first and it turned out great as you can see in the pictures.



This lemon pound cake has a perfect balance of everything flavor, texture & taste.Cooled cake can be wrapped tightly in plastic wrap and stored at room temperature for up to 5 days

Servings/Yield:- 8 servings/1 loaf

Ingredients:-

16 tablespoons unsalted butter (2 sticks), plus 1 tablespoon, softened, for greasing pan
1 ½ cups cake flour (6 ounces), plus 1 tablespoon for dusting pan
1 teaspoon baking powder
½ teaspoon table salt
1 ¼ cups granulated sugar (8 3/4 ounces)
2 tablespoons grated lemon zest plus 2 teaspoons lemon juice
4 large eggs
1 ½ teaspoons vanilla extract
Lemon Glaze (Optional)
½ cup granulated sugar (3 1/2 ounces)
¼ cup lemon juice, from 1 or 2 medium lemons


Procedure:-

1. Adjust oven rack to middle position and heat oven to 350 degrees. Grease 9 by 5-inch loaf pan with 1 tablespoon softened butter; dust with 1 tablespoon cake flour, tapping out excess. In medium bowl, whisk together flour, baking powder, and salt; set aside.

2. In glass measuring cup or microwave-safe bowl, microwave butter, covered with plastic wrap, at full power until melted, 1 to 2 minutes. (Alternatively, melt butter in small saucepan over medium heat.) Whisk melted butter thoroughly to reincorporate any separated milk solids.

3. In food processor, process sugar and zest until combined, about five 1-second pulses. Add lemon juice, eggs, and vanilla; process until combined, about 5 seconds. With machine running, add melted butter through feed tube in steady stream (this should take about 20 seconds). Transfer mixture to large bowl. Sift flour mixture over eggs in three steps, whisking gently after each addition until just combined.

4. Pour batter into prepared pan and bake 15 minutes. Reduce oven temperature to 325 degrees and continue to bake until deep golden brown and skewer inserted in center comes out clean, about 35 minutes, rotating pan halfway through baking time. Cool in pan for 10 minutes, then turn onto wire rack.

5. If using lemon glaze, while cake is cooling in pan, bring sugar and lemon juice to boil in small nonreactive saucepan, stirring occasionally to dissolve sugar. Reduce heat to low and simmer until thickened slightly, about 2 minutes.

6. After turning cake onto wire rack, poke the cake's top and sides with a toothpick and brush on Lemon Glaze (see illustrations below). Cool to room temperature, at least 1 hour. (Cooled cake can be wrapped tightly in plastic wrap and stored at room temperature for up to 5 days.)

Notes

You can use a blender instead of a food processor to mix the batter. To add the butter, remove the center cap of the lid so it can be drizzled into the whirling blender with minimal splattering. This batter looks almost like a thick pancake batter and is very fluid.
