Eggless Chickpea Burger / Patty ( Chole ki Tikki ) (Step By Step Pictures)



These chickpea patties are nice meat-free twist on the classic burger. They're low fat, high fiber, protein packed and taste delicious. If you don't want patties to fall apart, you absolutely need to make a rough chop while processing( There are some more tips at the end of the post).Use canned chickpeas for no-fuss preparation.If you like falafel, you will love these tasty little patties. They have tons of crunch and flavor, but they’re not deep-fried. You can eat them straight from the pan or make them ahead of time to store in the refrigerator or freeze.

Ingredients:-

Chickpeas / Chole / Channa:- 1 Cup (Boiled and drained or canned)
Capsicum/Bell Pepper/ Shimla Mirch:- 3 Tbsp (finely chopped)
Carrot/ Gajar:- 1/4 Cup (shredded)
Onion/ Pyaz:- 3 Tbsp (finely chopped)
Garlic/ Lehsun:- 3 cloves (finely chopped)
All Purpose Flour / Maida:- 1/3 Cup
Plain Bread Crumbs:- 1/3 Cup
Salt
Sesame seeds:- 1 Tsp
Chaat Masala:- 1/2 Tsp
Carom seeds/ Ajwain:- 1/2 Tsp
Garam Masala:- 1/2 Tsp
Oil for frying




Procedure:-

1)Combine chickpea, capsicum,carrot,onion & garlic together in a food processor and pulse 3-4 times, till everything is combined and appears like a crumbly mixture . Do Not over pulse.

2)Take out the above mixture in a big bowl, add all purpose flour , bread crumbs and all the remaining spices.Mix everything well.

3)Make small balls with the chickpea mixture, flatten it little bit by pressing it between both of your hands and keep it aside on a plate.

4)Heat oil in a non stick pan over a medium heat. When hot cook 2-3 patties at one time, do not over crowd the pan , cook on medium heat till both sides are nicely golden brown.

Serve hot with any chutney/sauce or on pitas, with your favorite sauces and toppings or on buns like a burger or can be served in lettuce wraps or enjoy with a yogurt & mint on the side.



Tip:-

1) The chickpeas should be completely dry. I usually boil the chickpeas a day before or if i have some leftover , dry that completely on a paper towel. and keep it in the refrigerator in an air tight container overnight Or alternatively when you drain your chickpeas, toast them in the oven before you grind them up.

2) You can add any other veggies also if you want like mushrooms, any herbs, corn etc but keep in mind don't add any veggie that have too much moisture as it will make the patty mixture moist and it will not come out great.

3)You can also substitute the spices and their quantities as per your taste.

4)The leftover uncooked ones can be frozen by individually wrapping and storing in a freezer bag.
