Pasta is my all time favorite dish so i am always looking for new ways to make. I watched this recipe on a TV show called Jamie Living. I was skeptical about adding garbanzo beans in pasta, but i planned to give it a shot and it turned out amazing. Garbanzo beans add great meaty flavor perfect for vegetarians .
Prep Time:- 20 minutes
Cook Time:- 30 minutes
Servings:- 3- 4
Ingredients;-
Pasta of your choice- 2 Cups ( Boil as per package direction and keep it aside)
Garbanzo Beans:- 1 can
Pasta Sauce:- 1 1/2 cup
Spinach:- 1 bunch
Onion:- 1/2 sliced thinly
Salt as per taste
Garam masala powder:- 1 tsp
Lemon Zest of 1 lemon
Lemon Juice:- 1/2 lemon
Olive oil:- 1 Tbsp
Garlic;- 4 cloves
Parmesan Cheese:- 1/2 cup
Cumin seeds:- 1/2 Tbsp
Procedure:-
1) Preheat oven at 400 degree Fahrenheit, In a oven proof tray mix garbanzo beans, onion , salt, garam masala, lemon zest , lemon juice & Olive oil. Bake for about 20-30 minutes and keep it aside
2) Heat 2 tbsp of oil in a pan and add cumin seeda, when they start to splutter, add 4 cloves of finely chopped garlic, saute for a minute and then add spinach, cook for 3-4 minutes.
3)Add pasta sauce, pasta and garbanzo beans mixture( after baking). mix everything well.
4)Cook for about 2-3 minutes and then add Parmesan cheese
Serve hot with your favorite salad
NOTE:- you can do the first step( baking ) a day in advance and store it in refrigerator till ready to use to save time.
