Dal itself is a very healthy dish but addition of palak(Spinach) and lauki(Bottle Gourd) while making it gives a extra boost of nutrition
Ingredients:-
Boil:-
1 cup channa dal(washed)
Handful of Palak/Spinach(chopped )
1 cup lauki/ Bottle Gourd (chopped)
1 tsp turmeric powder
Salt as per taste
Tadka:-
2-3 tbsp oil
Cumin:- 1tsp
Mustard:- 1/2 tsp
Onion:- 1/2 (chopped finely)
Ginger:- 1tbsp( chopped finely)
Garlic:- 2-3 cloves( chopped finely)
Tomato:- 1 medium (chopped)
Turmeric:- 1/2 tsp
Red Chilli powder:- 1/2 tsp
Garam Masala Powder:- 1tsp
Coriander for garnish
Procedure:-
1)Take the dal and wash it atleast 2 times
2)Pressure-cook the dal with 1 tsp of turmeric, salt, palak & lauki until it is done.( I cook for around 15-20 minutes)..
3)Take oil in a frying pan and heat it.
4) Add cumin and mustard seeds and let it splutter.
5)Now add chopped garlic, ginger and fry for a minute and then add onion, saute until onion becomes light golden brown.
6) Put chopped tomatoes, turmeric powder, chilli powder, garam masala and fry again on a medium flame until tomatoes are tender.
7) Pour cooked dal into this mixture and mix thoroughly.
8) Serve it garnished with chopped coriander leaves.
