Any sabzi is more delicious when made with fresh organic vegetables picked from your own garden..This yummy capsicum peanut sabzi makes a delicious meal when served with rice, roti and curd.

Ingredients:-
Medium size Bell peppers ( 1 red and 1 green):-2 ( chopped into 1 inch squares)
Small onions:- 2 (( chopped finely)
Tomato:- 1 (Pureed)
Tomato paste:- 1 tbsp
Grated ginger:- 1/2 tsp
Turmeric:- 1/4 Tsp
Salt
Oil:- 1 Tbsp
For Peanut Sauce:-

Oil:- 1 Tsp
Peanuts:- 1/4 Cup
2-3 dry red chilies
Coriander seeds:- 1 Tsp
Cumin seeds:- 1 Tsp
Urad dal:- 1/2 Tsp
Chana dal:- 1/2 Tsp
Sesame seeds:- 1/2 Tsp
Cloves:- 2
Jaggery/gur & Tamarind piece :- Lemon Size
Procedure:-
1. Fry the ingredients for the peanut sauce in 1 tsp oil for about 5-7 minutes. When cool, grind into a smooth paste by adding a small lemon size jaggery piece and seedless tamarind piece. You will need to add about 1/3 cup of water to grind. Keep aside.
2. In a non stick pan, add ginger and onion , fry for 2-3 minutes , then add bell peppers and fry for another 5-7 minutes.
3. Add tomato puree & tomato paste. stir well and continue to cook for another 5 minutes.
4. Add the peanut sauce, salt and about 1 cup of water.
5. Stir well and let simmer for about 10 minutes.
Serve with roti/Indian Bread..Enjoy:)
Love the fresh bell peppers...and the subzi looks so delish..would be a great accompaniment with rotis.
