Lauki Ka Raita ( Yougurt With Grated Bottle Gourd )


Raita is made my mixing yogurt, veggies(of your choice) and spices.

This can be served as a simple raita or as a side dish with any traditional meal.Make this as a nutritious and healthy side dish by preparing it with low fat yogurt..


Ingredients:-

Lauki/bottle gourd/ghiya:- 1 cup (Peeled and grated, don't squeeze out the water)
Curd/yogurt:- 1 cup
Toasted cumin powder:- 1 Tsp
Black Salt:-1/4 Tsp
Black Pepper;- 1/4 Tsp
Salt
Coriander Leaves(chopped):- 2 Tbsp


Procedure:-

1)Peel and grate the lauki, keep it aside, don't squeeze out the water

2)Add 4 cups of water in a pan along with the grated lauki. Boil it on the medium heat for about 4-5 minutes.

3) Drain the lauki from the water and squeeze out all the water by pressing it between your palms.

4)Take a bowl add curd, grated lauki , spices and coriander leaves..Mix everything well..This will the thick raita but if you like you can add some water/milk or make desired consistency.

Serve it chilled with any meal..Enjoy:)
