Eggless Semolina Cookies


This is the definitive Indian Cookie. Countless recipes have all sorts of different ingredients but they all contain semolina and all purpose flour. Many decades ago, women would prepare their cookie dough at home and take it to a communal oven or bakery for the baker to bake. The cookies would then be delivered back to them..

Makes approx 16-18 cookies

Ingredients:-

Superfine sugar:- 3/8 cup
Unsalted butter:- 5 1/2 Tbsp
Vanilla extract:- 3-4 drops
Green cardamoms pods, seeds only , crushed:- 4
All purpose flour (sifted):- 1 1/8 cup
Fine semolina:- 3/8 cup

Procedure:-

Preheat the oven to 375 F, Grease a baking tray

1) In a bowl, cream together the sugar and butter with a wooden spoon, until light and fluffy.

2) Beat in the vanilla extract and cardamom.

3)Add the flour and semolina.Mix into a firm paste and gently knead for 5 minutes.

4)Dust your hands with the flour.Take pieces the size of golf balls ,Place on the baking tray at least 1 inch apart and bake for 12-15 minutes or until light brown.

6)Cool on a wire rack.Store in an airtight container for upto 3 weeks.

Serve with tea..Enjoy:)
