Whole Wheat Soft Banana Cookies


I know banana cookies might sound strange but it tastes really good, somewhat like banana bread..

Recipe Source:- Farmgirl Fare

Ingredients:-

Unsalted Butter:- 1 cup (Softened)
Granulated Sugar:- 1cup
Light Brown Sugar:- 1 cup
Eggs:- 2
Vanilla:- 1tsp
Very ripe Bananas:- 2 1/4 cup
Baking Soda:- 2tsp
All purpose Flour:- 2 cups
Whole Wheat flour:- 2 cups
Cinnamon:- 1tsp
Nutmeg :- 1 tsp
Salt:- 1tsp

Optional Additions:-

2 cups raisins or 2 cups chocolate chips
2 cup chopped walnuts or pecans
Or you can mix and match as per your preference..
( I used 1 cup of pecans + 1 cup of chocolate chips)

Procedure:-

1)Preheat the oven to 350 F
2) Using an electric mixer , mix together butter & sugars until light & fluffy
3)Add the eggs & beat until well combined
4)Beat in the vanilla.
5)Combine the baking soda and mashed bananas in a small bowl and let sit for 2 minutes to froth a bit.
6) Mix the bananas into the butter mixture, then add the flours, cinnamon, nutmeg, cloves, and salt and mix on low speed just until combined.
7) Stir in the raisins, chocolate chips, and/or nuts.
8)Use 1/4-cup measure to drop cookies onto a parchment-lined baking sheet.
9) Bake cookies for 16 to 20 minutes until lightly browned.
10)Cool on a wire rack.

NOTE:-If the batter gets too gooey to handle, put it in the freezer for a few minutes to stiffen up.

Store them in open container otherwise it will become very soft

  13. Preety, regarding your question about onion chutney. you can use 1/4 spoon tamarind paste and can add some more if you think it's not tangy enough. that's the easy part with tamarind paste :)
