his is really simple Okra and potato dish that you can make just under 15 minutes..I don't like to add tomatoes in this dish as it makes both potato and okra very mushy..
Ingredients:-
Oil:- 3 Tbsp
Potato( Peeled & Cut into small pieces ):- 2
Onion(chopped):- 1/2
Bhindi/Okra:- 3 Cups( Cut into small pieces
Haldi/Turmeric Powder:- 1 Tsp
Red Chilli powder:- 1/2 Tsp
Garam Masala Powder:- 1 Tsp
salt as per taste
Dry Mango powder/Aamchoor powder:- 1 Tsp
Anardana Powder:- 1/2 Tsp
Procedure:-
1) Heat the oil in a non stick pan on a medium heat.
2) Add potato and fry for couple of minutes.
3) Add Onion, turmeric, red chilli powder and garam masala and mix everything well. Cook for 2-3 minutes.
4) Add okra/bhindi and mix everything. Cover the pan and let it cook until soft but not mushy.
5)Add dry mango powder and anardana powder and mix .
Serve hot with Chapati/ Indian Bread...Enjoy:)
