Rice Crackers


Rice Cracker is also know as Pappu Chekkalu, Thattai or Nippattu and is a popular snack from Andhara(India).My dear friend ( Swati ) visited me last week and she taught me this wonderful recipe..These are really easy to make and fun to munch on anytime with tea or coffee..

It takes some time while frying but make sure to fry on medium heat otherwise it will burn or will not get cooked evenly.

Onion is the main ingredient in this recipe otherwise the cracker become very hard..And you can put green chillies as per your taste if you have little kids..

Ingredients:-

Rice Flour:- 3 cup
Channa Dal:- 3 tbsp ( Soaked in water atleast for half an hour)
Onion :- 1/2
Green Chillies:- 4
10 to 15 curry leaves
Salt as per taste
Warm Water
Oil For Frying

Procedure:-

1) In a bowl mix together Rice flour, Salt & Channa Dal
2) In a food processor grind together Curry leaves, green chillies & Onion.
3) Mix everything well ( 1 & 2) and make a dough with the help of warm water ( dough will be little crumbly due to the rice flour)
4) Put a aluminum foil on a flat surface and brush it with a oil
5) Now make small balls out of the dough and make as thin rounds possible by pressing it between your hands with the help of little oil ( so that it will not stick to your hands)
6) Place all on the oiled aluminum foil..
7) Heat oil in a deep frying pan.
8) When the oil is hot enough to deep fry , fry all the crackers until light brown on both sides.
9) Let it cool completely and store in a ait tight container for upto 2-3 weeks

Serve these with tea or coffee..
