No Bake Vegan Cookie Recipe

Makes:- makes 1 cup packed cookie dough ( 2 Servings)

Update:- If you don't like using raw ingredients then you can toast cashews,oats and flour before using.
Ingredients:-
Unsalted cashews:- 1/2 cup ( I used the pre toasted ones)
Rolled oats:- 1/4 cup
Spelt flour/oat flour/whole wheat/all purpose (any flour will more than likely work):- 1/4 cup
Salt:- A pinch
Natural cane sugar:- 1 1/2 Tbsp
Pure vanilla extract/:- 1/2 Tsp
Pure maple syrup:- 2 Tbsp ( you may need to add a bit more if it is too dry)
Chocolate or Dark chocolate chips:- 1/4 Cup
Procedure:-
1) In a food processor add the cashews & oats until fine crumbs start to form.
2) Add the salt, sugar & flour. Process until just combined.
3) Add the maple syrup & vanilla. Process until combined.
4) Add chocolate chips, either stir by hand or whirl in the processor.
5) Form into mini cookies and store in the freezer (if left).

How can they be called cookies.?? How r they going to be crispy or chewy ? They r more like flattened laddos....anyways,,my doubt is,,Won't the flour in them be raw ?

I use raw flour only...but you can toast it if you don't like raw flavors..

ReplyDeletei always make a small batch so i keep it for not more than a week on my counter top at room temperature..do refrigerate in a air tight container if you wish to keep it for longer..

They do look like baked cookies...it holds its shape very firm and firms up even more the next day...

ReplyDeleteShwetha Sikanth:- Please try to follow the exact measurements & recipe..i personally never had this problem..as you can see in the pictures dough starts to come together in the blender itself after adding all the ingredients..If its not holding together then may be try to add little more maple syrup (1 tsp at a time) & avoid adding chocolate chips....And if you can't make cookie shape then you can simply make balls ..and store at room temperature in an air tight container overnight..it firms up more as it sits..hope it helps..

ReplyDeleteThe idea seems interesting. But try to avoid eating raw flours. It will definitely not digest properly and will store in your body as toxins. Baking them is good for health. Eating raw flour(especially wheat flour) is also one other reason to become allergic to gluten someday.
