Black Bean & Corn Rice / Rajma Aur Corn Pulao/ Vegan Recipe



This is a quick, tasty and cheap dinner are perfect for those nights when you're wondering what to put on the table.This hearty side dish not only is high in fiber but also has that magical mix of protein and carbohydrates to keep your energy levels stable



Ingredients:-

Oil:- 2-3 Tbsp
Onion:- 1/2 (chopped or sliced)
Garlic:- 2-3 cloves, finely chopped
Curry powder:- 2 Tsp
Salt
Rice:- 1 Cup, washed
Red kidney beans:- 1 cup , canned or boiled
Corn:- 1/2 Cup, canned
Water:- 2 1/2 Cups
Tomato Sauce:- 1 Tbsp
Chilli Sauce:- 3 Tbsp or as per taste
Lemon Juice
Cilantro



Procedure:-

1) Heat the oil in a pan. When hot add onion & garlic stir fry for a minute then add curry powder and mix everything well.

2)Add red kidney beans, corn & rice. Cook for 2-3 minutes.

3)Add tomato sauce,chilli sauce & salt mix everything well. Add water , mix again and let it cook on low to medium flame until the rice is well cooked or alternatively you can transfer the whole mixture in a rice cooker and cook the rice as directed.

Sprinkle some cilantro and add lemon juice as per your taste just before serving.

Serve hot.

Notes:-

1) You can adjust the spices as per your taste or add any other indian spices if you don't have curry powder (like garam masala)

2) You can add any other veggies to give it more boost of nutrition and nice color ( try adding green or red pepper, carrot , peas).

3) Vegetable stock can also be used instead of water.
