Leftover Cooked Rice Pancakes/Chillas



Everyone always have atleast some leftover rice in the fridge/kitchen, atleast i do :). These pancakes are the great way to use those leftovers. Use brown rice to make it more healthy & feel free to use any veggies in the batter.



Makes 6-8 small Panakes/chillas

Ingredients:-

Oil
Cooked Rice:- 1 1/2 Cups
Besan/Gram Flour:- 1/2 Cup
Whole Wheat Flour/aata:- 1/4 Cup
Flax Seed:- 1 Tbsp
Curd/yougurt:- 1/4 Cup
Salt
Turmeric/Haldi:- 1/2 Tsp
Red Chilli Powder:- 1/2 Tsp
Chaat Masala:- 1/2 Tsp
Water:- 1/2 Cup (Appprx , more or less as needed)
Onion:- 1/8 Cup
Grated Carrot:- 1/8 Cup
Cilantro:- 1/8 Cup
Eno Fruit Salt:- 1 Tsp


Procedure:-

1)In a blender , blend together cooked rice,besan,whole wheat flour,flax seed ,yogurt & water (as needed, it should look like a pancake batter or dosa batter).

2)Pour this mixture in a big bowl and add salt, turmeric,red chilli powder, chaat masala, onion, carrot and cilantro. Mix everything well.

3)Add eno fruit salt(just before you start making) and put about 1 tbsp of water over it , mix into the batter lightly , don't overmix.

4)Heat the oil in a good non-stick pan over low-medium heat, pour laddle full of batter (about 1/3 cup) in a pan and spread it lightly , let it cook on medium heat until the top part looks dry, peek through to see if its cooked and then turn the pancake carefully and cook the other side until nice and crisp.

Repeat the process to make all other pancakes..

Serve hot with any chutney/sauce/pickle..
