Quick Lobia/Black Eyed Peas Stir Fry



This super quick stir fry can be made under 10 minutes. In this recipe black eyed peas are cooked with tomato puree and indian spices to make a delicious stir fry.



    Ingredients:-

  • Lobia/ Black Eyed Peas:- 1 1/2 Cup
  • Oil:- 2- Tbsp
  • Mustard seeds:- 1 Tsp
  • Cumin seeds:- 1 Tsp
  • Turmeric powder:- 1 Tsp
  • Red Chilli Powder:- 1 Tsp
  • Garam Masala powder:- 1 Tsp
  • Coriander Powder:- 1 Tsp
  • Tomato(made into puree):- 2
  • Salt as per taste


Procedure:-

1) Boil lobia by adding salt (as per taste)..

2)Heat oil in a pan ,add jeera /cumin seeds & Mustard , when they start to splutter then add tomato puree , turmeric powder, red chilli powder, garam masala powder & coriander powder. Cook everything for 2-3 minutes .

3)Add boiled lobia and mix everything well, do the taste test at this point.

6)Cook for couple of minutes and garnish it with coriander

Serve hot with Rotis/Indian Bread...Enjoy:)
