Vegetable Kolahpuri




This is a Maharashtrian dish with very unique flavor, recipe adapted from Tarla Dalal.If you are in a mood of trying something new and different then i will recommend you to try this recipe..

Ingredients:-

Mixed Boiled Vegetables:- 2 Cup( Carrot, beans, Peas)
Oil:- 2 Tbsp
Cumin seeds:-1 Tsp
Salt to taste
Onions:- 1 Cup (Finely chopped)
Tomatoes:- 1/2 cup (Finely Chopped)
Turmeric powder:- 1/2 Tsp (OPTIONAL)
Garam Masala:- 1 1/2 Tsp
Chopped coriander leaves for garnish

Ground in a paste

Dessicated Coconut:- 1/4 cup
Dry red chillis:- 2 ( or adjust as per your taste)
Garlic:- 2
Ginger:- 1 inch piece
khus-khus(poppy seeds):- 1 Tbsp
Sesame seeds:- 1 Tbsp
Coriander seeds:- 1 Tsp

Procedure:-

1) Heat oil in a pan, add cumin seeds when start to crackle add onion and fry until golden brown
2) Add tomato and ground paste and cook until oil is separated.
3) Add vegetables, salt , turmeric ( if using), garam masala powder and mix everything well.
4) Add 3/4 cup of water and bring it to boil.

Serve hot garnished with coriander leaves with roti/bread/paratha..Enjoy:)
