Lobia / Black Eyed Peas Sabzi
Here is another simple , quick and protein packed dish and i bet you will never know while eating that you are having such a super nutritious dish , enjoy it with rice , rotis or just enjoy a bowl of sabzi as it is anytime
As a high-potassium, low-sodium food it help reduce blood pressure. Not only are they low in fat, but when combined with grains, beans supply high quality protein which provides a healthy alternative to meat or other animal protein (Source- Google)
Ingredients;-
Oil:- 3-4 Tbsp
Cumin seeds:- 1/2 Tsp
Mustard Seeds:- 1/2 Tsp
Ginger:- 1 Tbsp (chopped finely)
Garlic:- 2 Cloves (chopped finely)
Onion:- 1 (chopped)
Tomato:- 2(chopped)
Turmeric Powder:- 1/2 Heaping Tsp
Red Chilli Powder:-1/2 Heaping Tsp
Garam Masala:- 1/2 Heaping Tsp
Salt as per taste
Lemon Juice of one Lemon
coriander for garnishing
Lobia:- 2 cups
Procedure:-
Soak the Lobia overnight and then boil it by adding 1 tsp of turmeric and salt (as per taste)..
1) Heat oil in a pan jeera /cumin seeds, Mustard , when they start to splutter then add ginger and garlic and fry for a minute.
2)Now add onions, stir it till it becomes brown in color.
3)Add tomatoes , turmeric,Chilli powder ,garam masala & little water(1-2 tbsp approx) , mix it well.
4)Saute the mixture till tomatoes become soft (Approximately for 5-7 minutes)
5) Add boiled lobia and mix everything well( add little water if it seems little dry), do the taste test at this point.
6)Cook for couple of minutes and then add lemon juice and garnish it with coriander
Serve hot with Rotis/Indian Bread...Enjoy:)
