Aloo Matar ( Potatoes & Peas Curry)
This is one of the easiest curry to make , whenever i don't have much time to cook, i like to make this curry with rice. If you like spicy then feel free to add green chillies or more red chilli powder.To make the curry more rich and smooth you can add milk or cream to it( If adding add after 7th point and let it simmer for 2-3 miutes..
Ingredients:-
Oil:- 2-3 tbsp
Jeera/ Cumin:- 1/2 tsp
Rai/ Mustard seeds:- 1/2 tsp
Curry leaves:- Few (optional)
Garlic:- 3 cloves ( minced)
Ginger:- 1 inch piece ( finely chopped)
Onion:- 1 small (chopped)
Tomato:- 1 1/2 small (chopped)
salt as per taste
Turmeric:- 1 tsp
Red chilli powder:- 1/2 tsp
Garam Masala:- 1 tsp
Potato:- 3 small or 2 big ( cut into pieces)
Frozen Peas:- 1 cup ( approx)
Kasoori methi powder:- 1tsp
Coriander leaves for garnish
Water as per requirement
Procedure:-
1) Heat oil in a pressure cooker, add cumin , mustard & curry leaves, let it splutter
2) Add ginger and garlic , fry till light brown
3) Add onion & fry until light brown
4) Add tomatoes and all the spices , mix everything well, cook until tomatoes are tender
5) Add the potatoes and peas and cook everything for 2-3 minutes.
6) Add water and close the pressure cooker , cook on high for about 4-5 minutes ( i usually switch off the gas just before it starts to whistle).
7) Let it sit for 2-3 minutes.
8) Open the pressure cooker and if the curry looks very watery then you can simmer it for some time ( without the lid ) so that some of the water will evaporate or just mash some potatoes in the curry this will also thicken the curry.
Garnish it with coriander and serve hot with rice or roti..Enjoy:)
